Chicken Muffins

For anyone who loves muffin recipes- This is an Easy on the go food - can be frozen once done.

This is a small batch I made (3 Muffins) You can double the recipe up to make 6 or more.

*Get creative, you can add any meats to this such as diced up ham, Tuna fish, ground turkey, etc*

Ingredients:

5 oz. can of chicken Breast (or you can use grilled chicken finely chopped)

1 whole egg/1 egg white

1/8 cup of celery (finely diced)

1/8 cup of shredded chedder cheese (reduced fat) or (any reduced fat cheese)

pinch of onion powder

pinch of chicken seasoning (optional)

Non-stick spray

Directions:

Pre-heat oven to 350 -

spray 3 muffin cups with non-stick spray

In a bowl mix all ingredients, pour mixture into a well greased muffin cup (3) , place in oven for about 20-25 minutes.

Nutritional facts for ONE Chicken Muffin: (if you eat 2 just add on below)

Calories: 100

Fat: 3.7

Carbs: 1.2

Protein: 15.3

    great idea! My friend shared this recipe on facebook but it was made into patties and fried with some pam. I think the muffin idea is much better!

Just made these, absolutely love :P These are going to be perfect to carry while I'm on my son's field trip thanks!!

Sounds awesome. I have a similar recipe for breakfast with shredded hash browns, egg, cheese, and any meat and spices you want. I make them in a muffin pan and freeze them also.

This sounds yummy! I just might have to try this tomorrow.

I am making these now. Cannot wait to try them. I used fat free cheddar cheese (same amount), a 3 ounce can of chicken, 1 egg, celery seeds (I don't like celery), and onion powder. Mine are going to be less than 60 calories each (probably because of the fat free cheese and less chicken ratio) and 8 grams of Protein.

Cannot wait to try variations...adding some sage to make it taste like chicken and dressing...some rotel to make it taste like Mexican chicken...broccoli (like someone mentioned)...the possibilities are endless.
