MSNEKA reacted to NewSetOfCurves in Fresh Fruit Smoothies!
I love a fresh fruit smoothie in the morning! Every weekend I'll hit up my local Sam's Club or Cosco and purchase an array of fruits: pinapples, strawberries, berries, bananas, etc. when I get home I chop them up and place the chopped pieces in freezer bags. In the A. M. I'll take the frozen fruits of my choice, add a splash of NON CONCENTRATED apple juice or orange juice and Water, a tasteless Protein Powder, and a green superfood powder (like Amazing Green Grass Superfood) and blend. No ice needed due to frozen fruit! And viola! A GREAT tasting fresh fruit smoothie! Some people recommend adding spinach leaves or other greens. I've heard celery is a nice compliment as well. Hope you enjoy

Made these for dinner tonight- 1 was more than enough for me (plus salad). The other adults in my family each ate 2. We all voted this is a definite do again!!!! Portion controlled.
    Lasagna Cupcakes
2 cup marinara sauce (I just used 1 jar)
3/4 pound ground beef or turkey
    24 wonton wrappers
    8 ounces shredded mozzarella
    3 ounces Parmesan cheese
    4 ounces Ricotta cheese
    (optional) basil for garnish
Preheat oven to 375 degrees. Spray muffin tin (12) with cooking spray.
Brown beef and season with salt and pepper. Drain. Add sauce. Mix.
Begin with a wonton wrapper and press it into the bottom of each muffin tin.
Spread with a small spoonful of Ricotta cheese.
Top with a little meat sauce then some parmesan and mozzarella.
Use around 2 teaspoons of all the ingredients depending on your personal preference.
    Repeat layers ending with cheese.
Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out. Garnish with basil (if desired) and serve.

Hey guys, I found this recipe on Pinterest, and it is really yummy, so I thought I would share it with you. Each muffin has 58 calories, 9 carbs and 7 grams of Protein.
    Ingredients:
3/4 cup Ripe banana (about 1 large banana)
    3/4 cup Egg whites
1/2 cup Plain low fat greek yogurt (I used plain Chobani yogurt)
3/4 cup Oats (use gluten free if sensitive to gluten)
2 scoop vanilla Protein powder (I used Designer Whey™, or you could use any flavor you would like!)
1/4 cup Baking stevia OR 1/2 cup sweetener of choice that measures like sugar
    1 tsp Baking powder
    1 tsp Baking soda
    1/2 tsp Cinnamon
Preheat oven to 350. Spray muffin tin with non-stick cooking spray or line with silicone or foil liners (spray liners if using).
Place all of the ingredients into a blender and blend until mixture is smooth.
Divide mixture evenly between 12 muffin tins.
Bake for 15-18 minutes, or until toothpick comes out clean.
(Note: be sure to use either silicone or foil liners with the paper insert removed because they will stick, as does any muffin made with oats rather than flour!)

I made this for lunch today and had to share it was so delicious..
If youre at the stage where you can eat shrimp and veggies this is perfect.
Take 1/2 lb-1 lb jumbo peeled and devined shrimp (depending on how many servings you wanna make) 1lb makes about 4-5
    1 red bell pepper
    1 Tomato (large)
    1 squash
    1 zucchini
    1 Avocado
    1-2 garlic cloves
    1 shallot
    Olive oil
    Salted sweet cream butter
    Peppercorn
    Mince the garlic and shallot.
Dice the red bell pepper, tomato, zucchini and squash to bite size not too small for texture.
In a deep dish place your shrimp add sea salt, black peppercorn, garlic powder, paprika. Let marinade in for a few minutes.
Preheat skillet and add a tablespoon of olive oil once its hot stir in garlic and shallot mix until garlic browns a little (1-2 min). Stir in red bell pepper mix for a minute, add tomato stir for another minute and add rest of veggies. Cook veggies for about 4 min toss in tablespoon of butter, keep stirring.
Toss in shrimp until cooked thoroughly add sea salt and peppercorn to taste.
Place a bed of sliced avocado on a plate and put your shrimp on top. Voila! Enjoy!

MSNEKA reacted to john galt in No Pasta Chicken Spagetti
Here is a recipe that my wife perfected over the last 2 months:
    No Pasta chicken Spagetti
    Ingredients
    1 medium Spagetti Squash
1.2 lbs of Rotisserie Chicken (it took almost 1 1/2 chickens)
1 1/4 cup shredded sharp Cheddar cheese
1 1/4 cup of diced Bell Pepper (I used mostly red with a little green)
    1 diced small white Onion
1 can Cream of Chicken Soup - low fat
1 can Cream of Mushroom Soup - 98% fat free
Salt / Black Pepper / Italian Seasoning
    Steps
1 Cut spaghetti squash in half, remove seeds, and place cut side down on a foil lined baking pan.
2 Bake for 45 minutes at 375 degrees. Let cool and remove the spaghetti like flesh with a fork.
3 Place the spaghetti like flesh back on the baking sheet, spread it out evenly, and bake for 30 minutes at 180 degrees to reduce the liquid in the squash. Stir after 15 minutes. Remove from the oven when the very tips of the squash look like they are drying out.
4 In a mixing bowl, combine all other ingredients except salt, pepper, and seasoning. Mix together and spread on top of spaghetti squash while still on the baking sheet.
    5. Evenly distribute the salt, pepper, and Italian seasoning. I used about 1 1/4 teaspoon of Kosher salt, 1 teaspoon of fresh cracked black pepper, and 1 teaspoon of Italian Seasoning.
    6. Mix all ingredients very well and transfer to a 9 x 13 casserole dish.
7 Bake at 350 degrees for 45 minutes.
Makes about 10 Servings. My nutrition app gave this per serving:
Calories 187; Fat 8 grams; Carbs 9 grams; Protein 18 grams

Here is a modification I made to the cheese crisp recipe that has been posted on here before to make a buffalo chicken cheese crisp. preheat oven to 350. In blender or food processor place 1/4 cup of shredded cheese(used cheddar, but Mexican blend would probably be better), 2 oz of canned chicken breast drained, and hot sauce to taste. Blend until it is a fine powdery consistency. on a nonstick baking sheet spoon the mixture into small circles about the size of a potato chip I was able to make 11 of them. Place in oven for 10 minutes or until they appear properly done. Take off pan and let cool. Enjoy.

MSNEKA reacted to Richard Foor in quick easy buffalo chicken dip
If you like buffalo chicken an easy recipe I have found is to use the
2 oz canned chicken breast (I use the kind from Aldi's or the great value brand from Walmart)
add some hot sauce(amount varies by how spicy you like it, this has no calories or carbs so no worries),
add 1 wedge of laughing cow light queso fresco and chipotle.
    stir together,
then add 1/4 cup of shredded cheddar cheese(I use the Aldi's fit & active brand but whatever works for you), stir.
Put it in a microwavable bowl, put it in microwave for 1 minute,
stir and put back in microwave for another minute.
This comes out to 175 calories, 3 carbs, 9 fat, and 19 Proteins and it is quick and easy.
I have also at times taken this after making as described above and spread it thin on a baking sheet and placed it in the oven at 400 degrees and flipped it every 5 minutes until it gets hard like a cracker.
I sometime use the waterthins crackers with this if I have enough calories and carbs left for the day for them but you can just as easily eat this with a spoon.
    Enjoy.
