Congrats on your success so far! I love reading inspirational posts!

You are doing AMAZING - congratulations!

Tell me about the healthy snacks (I am always looking to add variety!) today I am making a couple of flavours of crinchy baked chick peas (garbonzo beans) which taste like heaven AND give me protein!

Thanks, my friend. Any chance of a couple of photos too?!

I am off to look. Yet another food to put in my suitcase home on my next trip to the US, I think....

I looked - no Beanitos here ?

Quick chickpea recipe?

2 400g cans chickpeas/garbanzo beans

Drain, pull off the obviously loose shells. Lay on paper towels for 30mins to dry, swapping out the towels after 5 mins.

Bake 400degrees, on a tray lined with foil. Check after 40 mins - may take up to an hour. Done when crunchy.

Drizzle over 2 tbsp olive or coconut oil, and coat. Then tip into seasonings.

Today, I have two seasonings - 1/2 each of:

1. Chipotle rub

2. Chilli con carne rub.

Also nice - garlic salt, bbq salt - even honey/cinnamon if you aren’t aiming to be low carb (you pop those back in the oven for 5 mins to caremelize the sugars...)

Actually - chickpeas are carby - I checked. Not sweet! When baked they halve in weight - this made me two flavours, 2 biggish movie-treat helpings of each. Each helping has 310 calories, 50g carbs - all complex, not sugar- and 15g protein. I have half or 1/3 a helping.
