For those of you who would like the black bean soup recipe:

1 pound dried black Beans or 4 cans of black beans

1 or 2 green bell peppers (I like poblano)

1 large onion

½ cup olive oil

½ cup white vinegar

1 tbsp cumin (I use more because I love it)

Salt and pepper to taste

1 ham hock (or meat seasoning for you non-southerners)

Dice all vegetables. (I buy the pre-diced from the grocery store so I can just dump everything). Sautée the vegetables in a little olive oil in pan until soft. Then dump everything else in the pan. Yes, I mean it. Add Water as needed to cover everything. You won't need much water in a crockpot.

Cook until beans are done and the liquid part starts to look creamy. Use immersion blender or regular blender to Purée.

Top with sour cream!
