My doctor's office has Quinoa on my shopping list starting week 6 post surgery. I'm still pre-op so I can't speak from actual experience, though.

Depending where you are post op. if you are on normal foods, then sure, it's a great source of protein, not to mention it's a complete protein! I eat it and i'm 2 months out. It's never given me any issues.

Oh yay... I love quinoa.... I'm hoping I don't have any trouble with it too

It is a seed, so best check with the NUT if seeds are not on your list.

What is everyone's favorite way to eat it? I've tried a few recipes but they were just "meh" for me.

If you are a fan of Quinoa (I am) I highly recommend checking out Feed Adam. It's a a project that focuses on teaching women in empoverished areas to farm small portions of land. The organization purchaces the premium product these ladies produce at a premium price allowing them to provide for their families and retain their dignity.

How does this relate to this thread? The product they are working with is Quinoa. Not only can you feel good for helping an organization like this, it's also the cheapest place I've found to get Quinoa.

Pre surgery my FAVORITE quinoa salad recipe:

(I hope I can eat it again someday soon....)

Makes a big salad:

-1 1/2 cups to 2 cups dry quinoa ( Cook and cool in refrigerator)

-1/2 can black Beans (or 1/2 cup cooked black beans)

-1/2 purple onion, chopped

-1/4 cup Sundried tomatoes

-1/4 cup chopped feta

-corn (optional. I never add)

Add 1/4 cup (ish) Kraft Greek Salad dressing (low cal is better of course)

Let it marinate and enjoy!!

OR, I use it as an alternative to rice. Great with curry dishes, or greek dishes (add greek yogurt or tzasiki (spelling)
