"cupcake" dinners

So I have seen this on someone's topic but I'm starting a new one....

emily bites.....Has anyone made these "cupcake" dinners before? if so how did they turn out?

I am planning on making some of these this weekend and wasnt sure on which was the best or not so good

I have!! and Omg soooo good! Lets put it this way, I enjoyed it so much I felt guilty.. and there was nothing to feel guilty about. lol.

I made the lasagna one. yum Yum! and had lunch the next day for work. It was great! this is where willpower comes in though. They were so good I wanted another.. I didn't. But I sure did want more. So now, I know I might make these as healthy treat to a cheat day for me because I like it to much and I don't like that I do. If ya know what I mean.

I have made the zuccuhini tots - love love them - double the recipe for a veggie serving. I have made the chicken parm. great as well, so easy to make and freeze. My mom made the buffalo chicken macaroni (I think that is the one), it was good as well. Not filling by itself, need to add a veggie to the meal.

if not--sorry i butted in

just this week i made baby meat loaves and used my muffin tins..it measures out to be 3 oz a piece (and very easy to freeze).

i also did this with my stuffing at thanksgiving (same 3 oz)...and i am guessing you could do it with a variety of foods/meals.

I have been doing this for years making baby meat loafs - a time saver. Done the mac n cheese to and added some ham bits this is great for lunch boxes and for a quick meal on the go.

I am doing the meatloafs tonight (I add shreded carrots to my meat loaf- adds some texture and sweetness, plus it gets another veggie in my ultra picky hubs).

Thank you everyone. I want to try and get a handle on some of these now before the surgery so after I can just go "oh do this then this"

I made some over the weekend for dinners this week and froze a bunch. The chicken parm and taco cupcakes were great! I am so glad someone suggested emilybites.com. Love the portions!

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
