Just placed an order for $118.40US for 2 households (mine and my mom’s) the following- 5 English cucumbers, 3 12pk 12oz of gatorade zero, 4 6pk Diet Pepsi, 1/2 gallon chocolate milk, 1/2 gallon skim milk, Texas toast cheese bread slices, 1 jar Classico Pasta Sauce, 100ct paper plates, 1 tub sugar free vanilla ice cream, 1 3pk Sargento balance breaks (cheese and almonds), 1 30pk capri sun drinks, 4 red/orange bell peppers, 2 Keebler fudge stripe Cookies, a bag of US smarties, 2 6pks viva paper towels, 1 gallon dill pickles, 1 bunch vine ripe tomatoes, 2 broccoli crowns, 1 pint blueberries, 1 skinny pop white cheddar, 2 6oz blackberries, 2 8ct gogurt tubes, and a bag of takis.
And I’m absolutely hating that it’s costing that much. 😭 5 years ago it would’ve been half that.

I may have staged the picture but I always have canvas totes to carry it in and kids who enjoy going through the spoils of grocery day. 😂

Was considering making some pickled cucumbers a couple of weeks ago too but turned out I had eaten the two I had. Now I’m thinking I should just buy some more. Mmm??
PS. How are vegetable prices in the northern hemisphere? Still recovering from the $14 punnet of blueberries 125g/4.4oz last week.
Last week I spent $96.94US for groceries of which one was a delivery order so that covered fees and tip, too. (The delivery item prices don’t include the discounts or sales promo code I had for $30 off $60

And yes, I’ll gnaw on the snapped off end of the raw asparagus unless it’s too woody.
The way I did the tart was with vegan cream cheese and mixed in the spices. I opted to forgo the pine nuts as I don’t like them and I was the only one eating it.

I’ve eaten pretty much the same dinner for the last couple nights. A spinach, potato, and asparagus Soup and an asparagus tart (used this recipe for inspiration). Added nutritional yeast to the top of the soup both days as well.

I kept seeing these raw vegan wraps on social media so I broke down and bought the ebook (actually a whole package of digital content). Anyway this is the Amazon link to the actual book.
The amount of prep work (maybe 20ish minutes of mostly chopping veg) that went into this is totally worth it. Most of the “cooking time” is really waiting on cashews to soak and the food dehydrator to do its thing.
It’s called a mushroom fajita wrap. The wrap is a blend of bell peppers, onions, oranges, pineapple, and carrot. Then it has chili lime portobello mushroom slices, a bell pepper mix, and a jalapeño lime cashew crema that is amazing! I added romaine because I had it and needed to use it.

A couple food before and after-
the first one is vegan chorizo with zucchini and peppers, cucumber Tomato salad, and spinach paneer puff pastries
the second is an impossible burger and multigrain toast (she got my order wrong but I wasn’t about to complain and ask for it to be fixed)

Ordered this falafel bowl from a new Greek restaurant in town. Holy smokes it’s HUGE! It’s taken 3 different sittings today and the help of a 9yr old (who ate all the pita and tzatziki, a few of the cucumbers and tomatoes and half a falafel). At this point I’m done trying to eat more so I threw it away.

It’s not all bad. I went for a walk with my youngest yesterday that prior to surgery I wouldn’t have been able to do. I’m slowly but surely getting better and getting my life back.

I’m so glad and grateful to be home. Even while in the hospital I noticed how much I was able to walk and hold a conversation while even just walking 300 feet (little over 90 meters). My surgeon even said I looked much better than before surgery and my 15yr old told me that she was happy to see me back and that it was sad watching me slowly decline (she had never shared that with me! 😭). Recovery is expected to last 4-6 weeks for bone healing but cardiac rehab lasts 8-12 weeks and starts week 2-4 post op.

First one is day 2 post op heart surgery dinner. Are about half.
The second and third are the after picture and nutrition info from dinner today (post op day 4 and a full day home). Used about 1/2 a serving of sauce to a full serving of dumplings. As you can see, I ate a half serving.
Im gonna have an ensure max Protein Shake with my medicine and go to bed. -
Meals and Snacks yesterday (minus a small handful of corn nuts)
avocado toast with cucumber and coffee
canned (tinned) peaches and Peanut Butter
Sautéed peppers and onions with garlic basil polenta and sugar free pancake Syrup
blueberries and strawberries with cranberry almond granola and coconut milk Greek yogurt
Mini vegan chick’n slider with sugar free BBQ Sauce and tomatoes.

Homemade mix of sweet and sour and general tso’s chicken but with vegan nuggets (on clearance for $1.59 a bag!) with rice.
Yogurt Gummy Snacks I bought my kid but they say they hate them now so I’m eating them.
Chopped salad with crispy corn tortillas- pinto Beans, tomatoes, onions, bell pepper, jalapeño, tajin, cumin, and lime juice

I was in the large family that celebrated/soothed everything with food. Sad? Have a cookie you’ll feel better! Good grades? Have some ice cream! Birthday? Don’t forget the cake! Going to a reunion? Make sure you bring the potato salad and pink stuff! Oh someone died? Don’t forget the luncheon and the funeral potatoes and pie.
But dinners most week nights were my responsibility after age 10 so we ate a lot of latchkey ability dinners- spaghetti, white people tacos (tortillas, ground beef, shredded cheese, iceberg lettuce and sour cream), and Mac and cheese with peas and tuna mixed in, and potato surprise (mashed potatoes, ground beef, peas, and shredded cheese).
Now? I’m still the one cooking even for holidays and such. I don’t regret it but I do make better choices now that I know better…. Most of the time.

chocolate Peanut Butter and strawberry oatmeal and coffee, ice coffee and Italian bread with red lentil “ragu”. Dessert was another slice of Italian bread with a glob of peanut butter.

How is your sister doing now, if you don't mind me asking? You kind of disappeared for a while - hope she's OK.
She’s doing better. She got a dialysis fistula and a port (for labs and meds) placed in October. She’s still working with physical therapy and a home health nurse to get stronger.
I on the other hand and currently on medical leave until after heart surgery because even walking into work leaves me short of breath when a few short months ago I was hiking miles and it turns out my congenital heart defect has acutely gotten worse over the past year. 😭

Most meals are between 300-500 calories each except the sushi was like 250. I’ve been eating a lot of eggs the past week but am definitely not doing the egg fast diet again! And most of these “meals” are things I pick at for a couple hours.
Today’s lunch (the last picture) I made at 3pm and finished around 630pm. It’s roasted butternut squash with sautéed kale, garlic, onion, and shiitake rice.

A viewing of todays meals (might have dessert later who knows)
breakfast- oatmeal with almond powder and strawberries
lunch- romaine (cos), Tomato, cucumber, and chipotle black Beans and the snack also pictured is cottage cheese and strawberries
so dinner I made the kids pappardelle with Italian sausage, peppers and onions in tomato sauce, broccoli carrot slaw, and cider vinegar cucumbers. A child claimed the offending Pasta so I didn’t eat any. I wanted the peppers and onions more than anything but the broccoli slaw was really good. Go me!
