Anyone Have A Good Roasted Chickpea Recipe?
I am trying to come up with some healthy Snacks to have around my house. I found a recipe for roasted chickpeas that I want to try. I will post the recipe, but I'm wondering if anyone else has any good roasted chickpea recipes.... Smoked Paprika Roasted Chickpeas 1 (15 oz.) can chickpeas (aka garbanzo beans), drained and rinsed 1 Tbsp. EVOO 1 tsp. smoked paprika pinch or two of salt Preheat oven to 360 degrees. Drain, rinse, and pat chickpeas dry with paper towel (it is important that they are dry). Pour chickpeas in bowl and stir in all other ingredients until evenly coated. Place chickpeas on baking sheet lined with parchment paper and roast for 40-50 minutes. Chickpeas should be crisp and dry on the outside, but still have slightest chew when eating. Let cool for 15 minutes and serve or store in air tight container. I would appreciate any other recipes as well! Thanks!

Low Carb Pizza Recipe
I am not doing low carb right now, but I thought this would be nice for those that are. I made this a while back and it's really good. I was skeptical, but it really is pretty amazing. Ingredients: For the crust: For the pizza: 1 (8 oz.) package of full fat cream cheese (room temp.) 2 eggs Freshly ground black pepper Garlic powder 1/4 cup grated parmesan cheese 1/2 cup jarred marinara sauce* A pinch of cayenne pepper 1/2 teaspoon oregano 1 cup shredded mozzarella cheese, or more if desired Sauteed pepperoni Garlic powder *Finding a sauce that doesn’t contain added sugar is not easy, but I did find a “no sugar added” by Ragu that with a few added seasonings tastes fantastic on the pizza. You could always make your own too but I’m not THAT brave yet. Directions: For the crust: For the pizza: Preheat oven to 350. Butter a 9×13 baking dish Blend cream cheese and eggs and season with pepper & garlic powder Add parmesan cheese and stir until combined Pour into buttered baking dish Bake for 20 minutes or until golden brown (this step is important. Make sure it cooks until golden brown so that it doesn't turn out too soft.) Let crust cool for 15 minutes before adding toppings After crust is cooked, raise oven to 400 degrees Mix together marinara sauce, garlic powder, cayenne pepper & oregano Top crust with marinara and spread evenly Top with mozzarella cheese Add toppings Bake for 8 minutes or until cheese is bubbly This pizza really surprised me. I made mine with ground beef as topping, but you can use any topping you like. My husband even liked it....and he is super picky!! The crust is not crisp like traditional pizza. Make sure you cook it til the top is golden brown and let it cool the full 15 minutes before adding the toppings and that will help.

I don't mean any disrespect either, but why do you care if people are posting recipes? Just because we have a band now, we are not supposed to think about food? Food is still a major factor in everyday life. This post is one of the many posts that offer a lower calorie and fat alternative to some typically high calorie fatty foods. I have a family to cook for, and it's nice to have these recipes and ideas. I am glad you don't think of food much anymore, but I don't think the majority of us are that lucky. If it bothers you that much, why do you even look at the recipes?

I would definitely make an appointment and have some fluid removed. That itself could make a world of difference. If it were me, I would start by having some fluid removed and see if it gets better. Then, if you are still continuing to lose, you may need to seek counseling. Best of luck to you!!

I love laughing cow cheese! I am definitely going to try the Alfredo sauce recipe. I also like to use laughing cow cheese in my chicken salad and tuna salad instead of mayo. Thanks for posting!

Well hey there, Leslie! It's been a while. Sorry you are not doing so well with your band. When are you having your band removed? I have heard lots of good things about the sleeve. Might be worth checking into. I miss talking to you! I was thinking about the 5k we ran a while back and how you got lost on the course, lol. Good times I haven't been doing too hot either. I'm still 40 lbs lighter than I was when I had my surgery, but still...I have gained A LOT of weight back. My weight gain started when I noticed I was losing restriction really fast after my fills. They started measuring the fluid and I was losing fluid everytime I went in. I thought they were going to fix my band, but they kept putting it off saying I wasn't losing "enough" fluid to validate surgery. I was having to go in every 2 weeks to get a fill and I just got fed up with it and stopped going all together. I was also diagnosed with cluster headaches a while back and had to go on a high dose of steroids for 2 months. I gained 30 lbs in two months from the steroid and I couldn't seem to get back on track after that. I've been meaning to post too. I've been walking with a friend of mine for a couple of weeks and that's been helping. It's nice having a workout buddy....it makes all the difference! I really miss the support we all used to give each other. Anyway, it was good hearing from you! Please check back in and keep us updated! georgia girl

Low Carb Stuffed Mushrooms
Hello everyone! I made some low carb stuffed mushrooms that were really good and thought I'd share. Ingredients: 1 package stuffer button mushrooms ( the one I used had various sizes and had about 12-13 mushrooms in it) 1 package ground sausage 1/4 cup Philidelphia Cooking Creme 1/4 - 1/2 cup of mayo (start with 1/4 and go up from there, until you get desired consistency) 1/2 of a green bell pepper, seeded and diced 1/2 c pepper jack cheese 1/2 c sharp cheddar cheese Directions: Preheat oven to 375. Brown sausage and diced peppers together until peppers are soft. Drain and pour sausage and peppers into a big mixing bowl. Add cooking creme, mayo (1/4 c), and cheeses. Mix together well and add more mayo if the mixutre is too dry. Remove stems from mushrooms. With a spoon, pack and mound the sausage mixture into mushrooms. Place mushrooms on sprayed baking sheet and bake until mushrooms are soft and mixutre is golden brown. The entire recipe has 22 carbs. I divided the mushrooms and the sausage mixture into 3 servings and cooked them a batch at a time. So, if you divide it into 3 servings, it would be about 7 carbs for about 4 good-sized stuffed mushrooms. Just refrigerate the other servings until you are ready to eat them. Hope you enjoy!

LilMiss, 3 am? Wow...that's dedication! Good for you! I got my stitches out today...whoo hooo! My labs came back okay, nothing cancerous. The place on my arms is a little of a concern. She called it Linear Porokeratosis. She froze it today, now it looks like I have a big worm under my skin....ick! She is going to have to keep a close eye on it though. Linear Porokeratosis is very prone to developing into cancer over time. As long as we watch it, it should be fine. I didn't get to run tonight. It will probably be Thursday morning before I can do it. Tomorrow is a crazy, busy day! Hope everyone is doing okay!

Mary, you are doing great! Keep it up! BTW, I'm not so great at getting up that early either....I struggle to get up at 7am, lol. I'm getting my stitches out today! One of stitches came out in church yesterday, lol. It kinda freaked my hubby out! I am going to try to run tonight, if it's not too hot outside. I'm sooo ready to get back at it. I am going to start on week 4 again and see how it goes. Hopefully it won't be too bad. How is everyone else doing? Let's keep encouraging one another!

Welcome NicVio! Hey Ebony! Good to hear from you! It's been a while. Keep up the great workouts! I am being a good girl and abiding, lol. My hubby is a sweetie....he's looking out for me. I go back Aug. 10th to get the stitches out and I should have my lab results by then. Hopefully everything comes back normal. LilMiss, setting small goals is really smart. I think that's what I need to do. I just completed day 2 of no sweets. So far so good. I have had a little sugar in certain foods (yogurt, Cereal, etc.), but not much refined sugar....that's the stuff that gets me in trouble. I'm getting a much needed fill tomorrow and they are still measuring my fluids every 2 weeks and documenting how much is missing. Hopefully they can get what they need and fix it soon! Hope everyone has a great week!

Congrats marsmom! That's great! Hope everyone is doing good. I was going to move on to week 5 this past week, but that has been put on hold. I went to the dermatologist earlier this week and she cut a couple of places out on my leg and arm, so I have stitches. The stitches don't come out until Aug. 10th, so no runs until then.....darn it! I was so excited to start week 5! Since I won't be running until Aug. 10th, I'll probably have to repeat week 4 again before moving on.

Mary, it's not painful. I cut my finget chopping vegetables yesterday and it hurt way more than the stitches, lol. I want to run so bad, it hurts! I feel like I would be fine to, but my hubby is insisting I wait so I don't blow my stictches. So aggravating! I used to think I could never run too...until I challenged myself to the Couch to 5K. It gradually works you up and I even repeat weeks if necessary. I love the challenge :w00t: I have been doing soooo horrible with my eating. The sweets are out of control! I think I need to just quit eating any kind of sweets, since one little bite always leads to 20. Seriously, it's like a drug to me....always leaves me wanting more. I have been making some very positive changes in my life and I feel so much happier! My next positive change is going to be cutting out the sweets and it starts tomorrow! I've got to get a handle on this one last thing. I hope everyone is doing good! Let's continue to encourage one another and keep up the great work!

Hey guys! Week 4 has been going GREAT! My plan was to move on to week 5 tomorrow, but that's going to have to wait. I went to the dermatologist today and she ended up cutting off 2 places on my left leg and one place on my left arm. I have stitches in all the spots, so I can't run again until they remove them, Aug. 10th. Ugh! I certainly don't want to bust the stitching out, so I guess I should abide, lol. I think I'll just walk until I'm cleared to run. I gotta do something. mary, have fun at the reunion! LilMiss, how's it going?

Thanks :smile2: Well, it was pouring rain Thursday night, so I did not get to run before heading out to Atlanta, Friday. I had an AWESOME time at the concert! They rocked it out! I drove 4 hours there, left the concert at 12am and drove 4 hours back. My weekend was pretty exhausting. My niece spent the night with me Saturday night and we didn't go to bed until 3am. I went to bed early last night and slept great! I ran this morning. I did another day of week 4. I am going to start week 5 on my next workout and see how it goes. I am going to focus hard on eating healthy foods....that is where I fall short. Going grocery shopping in a bit, so I'll stock up on healthy stuff :sad: Hope you all have a wonderful day!

I am doing much better! I only got in 2 runs last weeks. I went to see Grace Potter and the Nocturnals in Atlanta Friday night, so my weekend was pretty busy....but awesome! 4 hour drive to Atlanta and then 4 hour drive back. It messed up the rest of my weekend, but it was so worth it! I ran this morning. I did another day of week 4. I am doing great with it....I think I will take a stab at week 5 on my next workout. Week 5 is where I ventured off of the program last time and created my own thing. We'll see how it goes this time. Liftingchic....15 miles a week is AWESOME! Congrats and keep it up! Good luck on the upcoming 5k!

Thanks for noticing that LilMiss! I have worked hard to change my "all or nothing" mentality. A few months ago, I probably would have given up after being sick for so long. I am trying to make lots of positive changes in my life...physically, spiritually, and mentally. Just being happy in general! You are kicking butt on these workouts! Good for you! Very inspiring!

Hi guys! Sorry I haven't checked in much lately. I have been having some hellacious stomach problems! I was sick for a solid week with it, then got better, then more trouble for a couple of days. I am finally feeling like my old self agian! I only ran once last week and I've ran twice this week so far. I plan of running again tomorrow night. Normally I wouldn't run two days in a row, but I going to ATL Friday to see Grace Potter and The Nocturnals in concert. Can't wait!! I know if I don't run tomorrow, I may skip it over the weekend. You guys are doing GREAT!! You guys have inspired me to step it up notch next month and add something new. I love the Couch to 5K, but it's not enough. The weight isn't coming off. I am still doing really good with it. I'm on week 4 and hope to move up to week 5 next week.

Today is the first day I have felt halfway decent. Thank the Lord my stomach has stopped cramping! I will probably wait until Tuesday to start running again.

That sounds great LilMiss! food is where I run into trouble. Just can't seem to get back on track with it. I have had a stomach virus since Tuesday evening and I haven't been able to run. I don't think I will be able to tomorrow either. This is one long stomach virus! I will probably visit the doc tomorrow if I don't feel better. As soon as I'm over this crappy virus, I'll start posting my food. I think it will help me too!

Leigha, your 6 hr cleaning spree very well could have had something to do with it. Maybe your muscles were too worn out. Some weeks I have to do a couple of runs back to back (M, T, Th or T, W, F). I find that my back to back runs are much harder than the other runs (that have rest days in between). I think our muscles need a break in between workouts. Being on liquids could have been a factor too. More than likely, it was a combination of the two. Don't get discouraged...you are doing so great! Shake it off and keep on trucking. Let us know how the next one goes. Good for you! Don't worry about your weight. I am 275 and I'm on week 4. Remember to stretch before and afterwards to avoid muscle strains. Good luck and let us know how it goes! Well everyone, I haven't ran since Tuesday and I don't look to be able to run tomorrow either. I have had a terrible stomach virus since Tuesday night. I am so ready to get over this and run again. I have never had a stomach virus to last this long. I will probably visit the doctor tomorrow if I'm not better. Keep up the good work everyone!
