I love omelets and I was really wanting one this morning so I decided to do a lil experiment. I sautéed onions, yellow and green peppers , and mushroom in olive oil then I took the mixture and put it in my blender with one egg and a splash of milk. After everything was broken down nicely I cooked the egg mixture in light olive oil then topped with white cheddar cheese. It was delicious

Thanks everyone, that's all very helpful. I suppose I will do the right thing and check with the doctor before I change my post op diet plan. It's just kinda embarrassing already asking for shortcuts. I almost feel like if I can't handle these first few stages how am I gonna act the rest of my life ?!
