Are you taking a cooler?

I'd probably go the yogurt/jello/pudding type route for beach food at 3 weeks out. You can buy those in small containers that you can easily throw in a cooler. Also, I see little single serve applesauce packs at the store - those would work if you don't have a cooler. Take some cheese or cottage cheese or a boiled egg for some protein - yogurt can also be good for that.

Breakstone has single serve cottage cheese. Laughing cow cheese
