Eat it until you throw up... then the next day eat a little less than that.

Joking aside, everyone is a bit different. I could eat a good half cup or so pretty early out... now I have no problem finishing off a starbucks oatmeal with blueberries.

have you gotten a meal plan of some sort from your surgeon?

Have you been cleared for oatmeal? Just checking, but for some oatmeal can be rough early on. They usually recommend cream of wheat.
