Good question! I went to look up low carb lentil recipes on google. This one struck me as sounding good.

Lentils are a big part of Indian dishes and curries. They are awesome that way, and have a ton of flavor! Google anything with the Indian word "Daal" in the recipe name.

I add brown lentils to many dishes that require slow cooking; beef chilli, bolognaise, curries, casseroles etc.

They fill out a meal, are economical, and are full of fibre. I learnt this from my mother who used to add lentils all the time to make meals go farther.

lentil chili, in salad with chicken or bacon

Ok BEST pre made lentils are by Tasty Bite. Theyre called "madras lentils". They are lentils and red beans with spices in a creamy tamato based sauce... Like a chili consistancy! Yum they are SO good, i get them at costco. Not sure where else they sell them but theyre worth looking around for!

I used to have the book "Skinny b***h in the Kitch". When my son went vegetarian for 2 years, it was my go to book. It has a really good cold lentil salad in it. Peppers, fennel, lentils- all sorts of stuff. Wish I had the recipe still but shouldn't be too hard to find.
