Enchiladas

Now that I have everyone's attention, I have a question. I've been pretty conservative with my meals over the last 3 months since being sleeved. I haven't tried sushi, or Pasta, or rice, or bread, or anything really. I've been eating grilled chicken, lean steak, veggies...basic stuff. But I have to admit, I've been craving enchiladas over the last 2 weeks and the craving is getting stronger. Can I even eat an enchilada? I've been too scared to try it. But then I read people here who are eating stuff I would NEVER eat because I'm afraid it's going to kill me. Fast food? Toast? Sushi???

So anyway, am I just being a pansy about a lot of things and should I try to broaden my horizons a little? Or is it still too early?

Why not? The corn tortilla doesn't get mushy like the flour ones and the rest of the ingredients (cheese, chicken, beef, etc) are fine. One question is can you tolerate the spiciness? I've eaten Mex. food regularly since being sleeved 2 1/2 mos ago without problems.

Could you make something that gives you the taste but is more nutritious? I wonder If you did like a small low carb tortilla with cheese and some shredded chicken with low fat cheese and Greek yogurt...throw on some enchilada sauce. I'm not really answering your question, but just a thought?!

I'm 9 weeks post op and I've had enchiladas, no problem here, so I don't foresee a problem.

I make mine with ground turkey and eat the filling first maybe 1 or 2 bites with tortilla but that is all it takes to make me satisfied! Gotta have spice in your life once in a while!

You probably won't be able to eat more than a few bites. I did, and discovered that I don't like tortilla's any more. I don't really like breads either. ;)

One of my fav meals on my pre-op supervised diet was a taco bowl. I layered refried Beans, beef or turkey meat with taco seasoning, cheese, lettuce, tomatoes, green peppers, salsa and lean sour cream. Gave me all the flavors I was craving. I think this will be a staple again through mushies and soft foods post op!

What tortilla would be best? Corn or Flour? I would think Corn because it would seem to break up and digest better, but I'm not sure.

Definitely corn. Authentic enchiladas always use corn, if you use flour, you are basicly making a really small smothered burrito.

Yes that's what I figured too, but I was also talking about any other time. If I wanted to take a couple bits of a tortilla, which one would be better corn or flour. I was always thinking corn of course, but just wanted another opinion.

Corn tortillas seem toto go down better for me, plus that's the authentic way.

Ok, my mouth is literally watering right now. That's how bad I want this. I think I'll try it and hope for the best.

When I come back here later crying with acid reflux and upset stomach, please have sympathy!

ok good news. I had 3/4 of a small chicken enchilada and I am sat-is-fied! I had a bite of the cheese enchilada but it didn't sit as well. So only chicken for a while.

Cool! I'm really happy that Mexican food seems to be a really great option after being sleeved. Being from Texas, we love our Tex-Mex!

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
