I made White chicken Chili in the crockpot and it turned out so good! I used ground chicken though instead of cubed chicken. Here is the recipe:

    I make this all the time but I add a can of Rotel and chop up an onion. My husband loves it and doesn't realize he's eating healthy. :-)
