    The only time my oldest makes an appearance in the living room is when she’s sick and needs comfort. She told me she had “the Covid cough” like last year. Sure enough positive. She’s been wearing a mask anytime she moves around the house but I’ve now got it along with my 10yr old.

    For super hot and sour lovers only. My go to Soup if I have zero calories to spare. The whole thing is 27 cal. If you like spicy, it is really good. I often add napa cabbage in it. It has konjac noodles which have super low calories, zero carbs and are a Water soluble Fiber (great health benefits for cleaning the tummy), peanuts, red pepper spice... Etc. I buy it at Yami buy (online Asian store). It's called Kon jac spicy and sour noodles by Mingzhu.

    This sounds amazing and like hot and sour Soup but spicier with noodles. I make my own hot and sour soup at home when we aren’t ordering Chinese food so I’m sure I could make something similar.

    223 calories for the plate. im sharing so not sure yet how much i'll eat.

  4. dinner last night- leftover rolls from thanksgiving, apple butter, and a cheese wedge.

    lunch today- a simple Greek salad and a dish made with onions, garlic, mushrooms, northern Beans, and pork meatballs. (460 calories, 29g protein)

    And what everyone wants to see- today’s breakfast! A 1/2 cup skim milk milk in my chai and an Andes mint. 😂

  5. I’m almost 3 years post first WLS (and a little over 2 after revision because of gerd). I have a small PFO and a bicuspid aortic valve (diagnosed while getting cleared for WLS). I have PVCs and SVT in my medical chart due to sepsis from a bowel obstruction. I can’t take metoprolol because my resting blood pressure is too low to support it so I get yearly echos and see my cardiologist twice a year.


  6. A disaster of a breakfast- bacon egg and cheese omelette that made me physically sick. 135 calories for what I ate prior to it coming back up.

    Then dinner of leftover stuffed pepper casserole topped with garbanzo Beans and fried onions. 396 calories.

    In between I’ve been testing crispy cookie recipes for snickerdoodles and chocolate chip. The red velvet Cookies are a cheat using a boxed cake mix (add 2 eggs and 1/2 cup oil) and Hershey’s cream cheese chips.
    Annnnnnnd, now I’m onto baking oatmeal scotchies and eventually testing a recipe I’m going to call blueberry cheesecake crumbles (blueberry cream cheese cookies with a blueberry swirled cream cheese frosting then topped with streusel.

    I honestly don’t know what I’m going to do with all these cookies (currently 13 dozen) seeing as thanksgiving is this week and everyone will be eating pies and such.

    After trial and error I found that cutting into cubes then pressing works best. Then, I coat mine in cornstarch, a little untoasted sesame oil and soy sauce then bake at 400 for 20ish minutes.


  8. Also, today was a meal prep day!

    for kids’ breakfast this week (not pictured, forgot to grab a photo sorry) 10 bacon egg and cheese burritos, 10 sausage, egg and cheese burritos, 10 Canadian bacon, egg and cheese sandwiches, 6 egg and cheese sandwiches, and pancakes. This took about an hour total.

    freezer meals (pictured in my very disorganized freezer) 2 pepper steaks, 1 beef mushroom roast, 3 stuffed pepper Soup, 2 creamy Italian chicken, 2 balsamic chicken, 2 corn lime chicken, 2 sweet and sour chicken, and 2 extra bags of chicken ready for other meals. So 14 dinner meals plus 2 extras which took maybe 2 hours total. I can just dump them in the slow cooker in the mornings and have dinner ready without much effort.

    Also, an unknown child spilled something in there (I’m thinking blueberries) and by the time I was done and saw it 😒 … It can wait another day.
