A creamy, fruit-based soft serve dessert! Ingredients 1 fresh pineapple, peeled, cored and chopped 1 cup almond milk 1 tablespoon honey (optional, for authentic sweetness)
Instructions To get started, you’ll want to freeze the pineapple chunks. I chopped mine a day ahead of time, and froze the chunks overnight. You could also purchase frozen pineapple, if you prefer. As you can see from the picture below, the frozen pineapple reached the 6.5 – 7 cup mark on my blender pitcher. This recipe works best in a high-speed blender, like the Vitamix, because you’ll need to be able to pulverize the frozen pineapple into an ice-cream-like consistency. A normal blender will most likely not work, but a food processor might. Combine the frozen pineapple with the almond milk and honey, then blend until a frozen sorbet texture is achieved. For an authentic Dole Whip presentation, transfer the frozen dessert to a large plastic bag, and cut off the tip to create a piping bag. Pipe the pineapple whip into 4-6 dishes, and serve immediately! Any leftovers can be frozen in an ice cube tray, and used in smoothies later.

Well I am on day 3 of pureed foods and I wanted something different so I put together this little meal in my crockpot and puréed it.
    Ingredients:
Boneless and skinless chicken breast (I only used one because I was unsure of how it would turn out)
1 can of carrot slices drained
    Low sodium chicken broth
1 low sodium chicken stock concentrate
*Optional mashed sweet potatoes or mashed potatoes about enough to to thicken once done
If using pouch potatoes use 1 pouch, don't add the Water but add the milk
I added all the ingredients in my crockpot and set it on high ( low if you want to let it go longer while your busy). I cooked in on high for 4 hours. Check to see that the chicken pulls apart without no problem. I added one pouch of sweet mashed potatoes and the 1/2 cup of skim milk. I pureed it all. You can store this in containers or try cooling it off completely. Putting the purée into an ice cube tray. Freeze it. Then put into freezer bags and freeze them. Each time you need one just grab what you need and defrost. Heat it up by microwave.
This was so good my kids loved it. It was something new and different. I hope someone can use it.

I don't know about you, but I was intimidated by the thought of pureeing chicken. Here is how I did it. It turned out great.
    Ingredients:
    4 chicken breasts, boneless skinless
2 cans or one carton chicken broth
Use a wide pan with a flat bottom and a lid, like a sauté pan. Place the chicken breasts in the pan. It's ok if it is a tight fit.
Use enough broth to just cover the meat.
Put the lid on and cook on the lowest heat that will produce a slow boil. Once you get to the slow boil, set your timer for 20 minutes. If the broth gets too low, add a bit more.
After 20 minutes the meat should be so tender it is falling apart.
Put one breast in the food processor with about 1/4 cup of the broth. Blitz until it is puréed. Check for chunks. Repeat with the remaining breasts. I recommend freezing the purée in 3.5 oz (100 gram) portions.
