Having major surgery is a scary thing. I get how OP would want to hear you all say you DON'T have any regrets. It's exciting when I hear that as I wait for insurance approval and think a lot about this process.

I'll post a "before & during" pic since I'm four months post-op today and have about 50 lbs. left to hit my initial goal. Before picture is from January 2017, the during is from a week ago. First time I had put on decent clothes in a while, I had to run to J.C. Penney to pick up a cheap pair of slacks and dress shirt since I plan on dropping a few more sizes.

10 months post op...70lbs down. From 228 to 157...fluctuate from that to 160. Hoping to lose 15-20 more lbs by my one year mark in July. Here’s my before and after so far. All these pictures were taken in the last month.

Just over one year out from surgery and I’m so close to my first goal weight. I feel really good where I am but I do want to tone up some more.
    Started at 311lbs, size 24.
    Now I’m 180lbs, size 8.

Reach out to your surgeons office and see if they can recommend a therapist for you. It sounds like you need to dig down and work on some deep issues.
In the meantime, try putting together meals and Snacks for the day ahead of time. Sometimes it helps to have things pre-prepared so you know what your "food allowance" is for each meal, or for each day. You can space out snacks accordingly - if you're looking for more right after a meal, ask yourself, "can I wait another hour before reaching for this next snack? " Consider that if you eat your allotted snacks too early you will be hungry later and try to space them out. This is just something I do to help when I am feeling like I am not satisfied even though I have just eaten.
Get rid of trigger foods that are in your cabinets or refrigerator. Having them readily available is just setting yourself up. When you feel a craving coming on, maybe go take a walk instead. Remove yourself from the places where in the past you had the habit of over-eating. It takes approximately 21 days to change your habits. Set this as a short term goal - when you have a craving, take a walk instead of reaching for food. Tell yourself that if you take a 20-30 minute walk and are still hungry when you get back, you will have a Protein snack.
Think of all the reasons that made you come to the decision to have this surgery. Maybe try journaling what you're feeling. It can be hard to lose the comfort that comes from food, it's like losing a friend. Find ways to keep your mind and hands busy - look for a new hobby that piques your interest.
You can do this. You are strong, have faith in yourself. Reach out to those in your life who support you.

I think there are parts of what you write that have sound merit for me. But I also know, that I could wipe out the progress of my 3-5lbs/month with one meal. I've lived low carb (between 80/20 and 90/10 virtuosity) for the past 18 years and it's helped me contain my hyperinsulinism/pre-diabetes/PCOS diseases. So I know that high glycemic carbs for me are a personal killing fields. Through that time, I only lost between 2-4lbs per month. It took me (with time off for poor behavior), 18 years to get 102lbs off. I don't have that kind of time any longer.
I have a honeymoon period of 6 months. I "might" because all people are different continue to lose for 1 to 1 1/2 years. But who knows? If I wanted to lose 3-5lbs per month infinity, I would not be looking at rearranging my guts on Tuesday. My secret fear is that I will lose focus and momentum and not ever reach my goal. Because, that's my pattern you know. So I'm probably gonna be that borderline obsessive WLS gal who counts and weighs and measures lol. And oh well! Sucks to be me. But I'll do it. And count myself so fortunate.
I want quick weight loss. I do. There are newer studies emerging in Europe that claim that quick weight loss is best for obese individuals because it keeps excitement, momentum, and successful days at a pitch. I believe it. I am that person. Ask any vet here and they will tell you maintenance is the hard part, cuz you no longer have that daily/weekly high of seeing that big downward jump on the scale, or losses on the measuring tape, or the downward trend line on your weight loss graph is now horizontal as it approaches zero excess pounds.

Dr. Michael Moseley talks about this in his latest book, Eight Week Blood Sugar Diet. https://thebloodsugardiet.com/
I don't know which way is right. I only know with pretty deep assurance which is right for me. I will still seek lots of lovely veg, some low glycemic fruits, and only a Protein adequate diet with healthy fats. I'm sure I will have cheat meals, even cheat weekends. But I will understand there will be a price to be paid for those off plan times.

I’m so glad in small-city Canada where I live we don’t have all those fast-food choices other than the standard McD’s, BK, Arby’s, Wendy’s, and Taco Bell! Both me and my hubby would be twice our size!
One thing I was always a sucker for was Wendy’s Baconator. But thankfully I’ve stayed away since my RNY!
Also, poutine (fries, cheese curds & gravy). It’s a Canadian thing and it’s my weakness! Can’t say no to anything with cheese!

Chipotle isn't using beef heads. Beef head meat is called cabeza at taquerias in SoCal, and it is delicious! I've never seen it referred to as barbacoa at local taquerias. (And I've had braised beef cheeks at some very high end restaurants, also delicious!)
