  1. Anyone else missing warm, ooey, gooey, cheesy pizza like me? Well you no longer have to suffer because there are alternatives to doughy crusted pizzas which we've all said goodbye to, or at least I have! You can make a delicious pizza crust from ground chicken breast. Who would've thought?! I put all the ingredients into MyFitnessPal and let it do the calculations for me. It tastes absolutely delicious! I'm sure you'll agree that at less than 250 calories and a whopping 31 grams of protein, this pizza will be in your wheelhouse of recipes Ingredients One pound ground (raw) chicken breast ¼ cup grated Parmesan ¼ cup Reduced fat 4 cheese Italian shredded cheese – ¼ cup shredded cheese is 1 oz. by weight ½ teaspoon garlic powder ½ tsp salt ¼ tsp black or cayenne pepper (I used cayenne) Tools Mixing bowl (stand mixer - easiest combing method) Baking sheet, pizza pan or pizza stone (crispiest crust) Parchment paper Wax paper Rolling pin Pam or any vegetable non-stick cooking spray Instructions Place pizza stone in oven, if you’re going to use one (my preference), and preheat oven to 450°F. In a medium bowl combine all of the above ingredients.Place a wet paper towel on a flat surface then place your parchment paper on it. Spray it with Pam and then put your chicken mixture on top. Chicken mixture makes 6 – 3 oz. portions, so 6 individual crusts (approx. 6"x4"). Lightly spray a sheet of wax paper with non-stick cooking spray (makes for easy removal). Place wax paper, sprayed side down and evenly press using a rolling pin to get it as thin as you’d like. Remove the wax paper and place parchment paper on pan or pre-heated pizza stone and bake until golden brown, 12 to 15 minutes (depending on thickness). My individual (very thin) crusts baked on pizza stone in just 12 minutes!Put the crust between two paper towels and pat to absorb any grease. It is chicken after all. Then place it on a new sheet of parchment before topping it. Top baked crust with sauce, cheese and healthy toppings. Place back in oven and cook until melted and bubbly 5 to 10 minutes. Remove from oven and enjoy! Crust: Nutrition Facts Servings 6.0 Amount Per Serving: Calories 114 Total Fat 3 g Carbohydrate 1 g Dietary Fiber 1 g Sugars 0 g Protein 19 g As Prepared : 2 Tbs Prego pizza sauce 2 Tbs Sargento reduced fat 4 cheese Italian shreds 1 tsp sautéed Vidalia onion 1 tsp sautéed red bell pepper ½ oz. cooked 90/10 lean ground beef Nutrition Facts Servings 1.0 Calories 246 Total Fat 10 g Carbohydrate 6 g Dietary Fiber 1 g Sugars 3 g Protein 31 g
  2. These pics are NOT easy to share because I have No make-up on and tons of loose skin and wrinkles, hence the the Yikes in my title! All that being said, I couldn't be happier and healthier. Last Summer I was wearing a size 22 swimsuit and the one I have on in the pic is a size 10, so YAY! Having had gastric bypass has truly saved my life. I was a slow but steady loser (can't exercise much due to a chronic nerve condition) and only have a few more pounds to go. These last 10 lbs. are the hardest. Being obese for 30 years took it's toll on me but I'm so happy now that I refuse to dwell in the past. Advice for those just starting out ... Take "Before" pics and measure yourself!!! Here are my stats: 54 years young 5' 2" tall HW 285 SW 260 CW 138 GW 130 Inches Lost chest: 12" above waist: 21" waist (@@belly button): 18" below waist (apron): 19" hips: 15" thighs: 8" knees: 3" arms: 6"
  3. Thank you so much everyone! I can't seem to lose these last 5 lbs. so I may be where my body decides it wants to stay. Hoping to have skin removal surgery next year so that should be at least 10 lbs. Best of Luck to all on their journey to health!!!

  9. Hard to believe what a difference a year can make... lost 121 lbs. so far! So glad I took "Before" pics and actually saved the clothes (3X top & 2X pants) to try on again at my 1 year Surgiversary! Here are the pics to show the difference, along with a couple of current pics in clothes that actually fit (tops M & jeans S). Having RNY (4/21/15) was one of the best decisions I've ever made! "Thank you" to all who've encouraged, supported and loved me every step of the way.     Protein bars

    Quest bars rock for me! My faves are Vanilla Almond Crunch for on-the-go, Cinnamon roll torn in half and microwaved for 20 seconds and sprinkled with a lil Splenda for Breakfast and chocolate Brownie torn into 8 pieces and microwaved on a plate for 20-25 seconds then sprinkled with a lil (less than pictured - LOL) Splenda in the evening - BEST Cookies EVER

  14. My hunger came back around 6 months and it freaked me out! I'm now 1 year post-op and it's still very real. I have steered clear of all bread, Pasta, rice, etc. since surgery and plan to stay on that track. When I feel the ole hunger monster screaming, I opt for Protein2o Water and it shuts him up - LOL! I absolutely love the stuff. Groupon had it on sale and (don't laugh) I bought 15 boxes (12 in each) so I'm set for awhile

    Rice? Pasta? Bread?

    I'm 1 year post-op RNY and for me I've just said "NO"! I haven't had even one bite of bread, Pasta, rice, crackers, chips, etc. I feel it's just garbage and would lead me to a regain. That's just NOT gonna happen!!! Sent from my SAMSUNG-SM-G900A using the BariatricPal App

    At 54 and my skin being stretched out for 27+ years, I have lots of loose skin. I have an extra set of arms, thighs and extra belly skin - LOL! What I don't have? My DD's but instead a couple of pancakes. Gotta laugh or I might cry. I'm OK with it all because I took this drastic step to prevent another stroke!     4 years post op and regain

    At Mayo we're told to keep the regain to no more than 5 lbs. We have support groups that meet once per month and a Facebook page to support one another. I feel it's one of the keys to success! There's a website bariatriceating.com that is run by a 15 year, post-op woman who experienced regain. They have a back on track program with great recipes and a Facebook page as well.
