  1. So I made this for the family last night. Mind you I'm still on pureed foods (Hopefully soft starting tomorrow) I made a large cookie sheet and based it on two slices per person serving 6 people 1 whole cauliflower head 4 cups of shredded mozarella low fat or fat free ( I used low fat) 8 egg whites 2 tablespoons minced garlice 2 tsps italian seasoning Toppings - I used sliced plum tomatoes, fresh chopped basil and some sauteed fresh spinach leaves So first you need to rice your cauliflower. This means you need to put it in your food processor and process until it looks like a rice consistancy. Next I cooked the cauliflower in a microwave safe container for about 9 minutes Mix in together the cheese, eggs, garlic and seasoning then combine with the cauliflower. Generously grease with PAM a large cookie tray or two small pizza trays Spread cauliflower mixture evenly onto pan Cook at 450 for 15 minutes After removing the Pizza Crust I added my toppings and sprinkled a little extra cheese on top... cook for 1-2 more minutes until cheese melts. 1 slices each - total calories 114 total fat 6 gms total carbs 3.5 gms total Protein 14 gms total surgar .5 gms cholesterol 40 mg You could cut down the fat by using fat free cheese instead of low fat

  7. These are a nice treat to have if you have kids in the house ( my husband loves them too) only 35 calories. If your really trying to have healthy treats in the house for your family, this is a good one. Blueberry Lemon Yogurt Cookies 1 cup granulated sugar 1 1/2 cups plain Greek yogurt 1 large egg, beaten 1 teaspoon vanilla 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup fresh blueberries 1 tablespoon of fresh lemon zest 1. Make the cookies: Preheat the oven to 375 degrees Fahrenheit. Grease several baking (spray with PAM) sheets, or line them with silicone baking mats, and set aside. 2. In a large mixing bowl, mix together the sugar and yogurt, then blend in the egg and vanilla. 3. In a separate bowl, whisk the flour, baking powder, and salt together, then blend it into the wet yogurt mixture. Gently fold in the blueberries. 4. Drop tablespoonfuls of cookie dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie. Bake for about 10 minutes, until the cookies start to barely brown at the edges. Remove from the oven and let the cookies cool on the baking sheet for two minutes, and then move the cookies to a wire cooling rack to cool completely. Some of the blueberries will burst during baking—this is to be expected and will not affect the taste!
  8. So at work yesterday I was wearing my favorite pumps and as I walked into a meeting both of my shoes fell off and I sailed across the floor. I guess I lost a bunch of weight in my feet... Time to go shoe shopping!!!!!

  13. Three days after I got home from the hospital I made ultimate pretzel crusted peanut butter cookie Reece's brownie bars. It was a test for me. Cooking is one of my favorite things and I thought if I can make these without wanting to lick the spoon I'll be ok. I did it! I sent them to work with my husband and I was told never to make them again... I guess they were way too good and to many calories.

  15. Keep your wheels on Lou. It can be overwhelming. I had to quit smoking in order to have my surgery.. I smoked for 30 years and it was what u did whenever I was stressed. I needed to find something else to do when I was stressed instead of smoking - eating - drinking. Luckily it was in November and I had to wrap christmas presents.. But let me tell ya, they were the most awesome wrappings I ever did. You just need to find that little something to distract you and refocus...
