What's for lunch?

Just wanted to get some ideas. It's hard to cook for just 1.

Today's lunch: frozen chicken breast (2 oz) baked in a bit of chicken broth w/ green Beans.

What are y'all eating today??

1/2 cup of homemade red lentil pumpkin soup. I'm planning on it all week, its that good!

White Chicken Chili with gluten free cornbread been eating it for 3 days....yummy

3.5 ounces of baked turkey breast and a combo of Chinese hot mustard and soy sauce (reduced sodium) to dip it into. :)

8 oz of chicken pot pie soup. Basically, the insides of a chicken pot pie sans potato. Delicious. Protein ... veggies ... what's not to love about that?

Dannon Greek yogurt with cracked pepper deli turkey and a cheese stick, followed 30 minutes later with chai iced tea.

Spaghetti squash with black beans and corn frozen mix with a tiny bit of cheese and lots of hot sauce. Very Latin flavor in my opinion

I obviously need to step up my game - or get one of you to cook for me! I'm hungrier after reading this than I was before breakfast!

Link to chicken Cordon Bleu recipe. Only bread item is a light topping of panko and bit of flour in the sauce, otherwise it's all protein- ham, Swiss cheese, chicken breast! I edited it a bit- kept the butter called for to make the roux in the sauce the same, but cut the butter in the panko topping to 2 Tbsp. I also subbed alpine lace reduced fat Swiss cheese for regular Swiss, and used lowfat milk instead of whole (don't try nonfat- you'll lose the creaminess factor). Makes a large 9x13 pan...would probably freeze well after chilling in the fridge. Cut into individual portions and defrost as needed! Very very tasty!

That chicken casserole looks yum.

I had blended & strained chicken tortilla soup. Kept it warm in thermos wrapped in heating blanket.

Sent the hubby to go get it w/ pink tupperware as Sweetwater doesn't have to go cups for soup. Lol he said he got weird looks. Don't care-

Sooo good.

chicken Cordon Bleu casserole!

I'm drooling over this. Lol

I sauteed some onions and garlic with zucchini, then I added some stewed tomatoes and italian seasoning. I cooked it all together for a while then added bunches and bunches of fresh baby spinach and wilted it down. This keeps in the fridge for about a week. When I'm hungry I get 3/4 of a cup of this and crumble an ounce of feta and half an ounce of asiago cheese and then microwave it. ZOMG!!!!!
