Watching the chew and got the idea from something they were making. chicken cordon bleu. Buy leg quarters and have the butcher remove the bones. Pound it down like you would a cutlet (skin side down). Salt and pepper to taste. Add one piece low fat ham, and one slice low-fat or fat free Swiss cheese. Roll the chicken and tie both ends with kitchen string. Place in 500 degree oven for 20-25 minutes. Remove and let sit 5-10 minutes to let juices redistribute and finish cooking. Enjoy. I was curious about leg quarter nutrition so here is the chicken nutrition not including ham and cheese.
