rack of lamb

One of my all time favorites is rack of lamb. tonight I finally made it and it was just as great as I remembered. I have not had it for about one year even though I was banded in July. It was very tender and easy to chew and swallow. I have found pork too tough to chew. My husband (doesn't eat meat) loves potatoes cooked with lamb. So I browned some small canned potatoes in the cast iron pan first with seasonings and then browned the lamb and finished it in the oven. It was a great dinner.

I need to keep eating different things for dinner or I will get bored and want to eat bad choices.

I have cast iron skillets that I have had for 40 years... you do not use soap on them, clean them with water, then oil them ... nothing cooks like iron skillets... lamb sounds good.. I made a boston butt roast on Sunday, it was really good and tender.. I have not tried pork chops...

I just discovered lamb about a year ago and love it. The only way I have had it so far is lamb chops cooked on the grill and can't get enough of them. Listen to Hely friend her on face book awesome recipes found there.

I love pork but it is too hard to chew. Lean lamb is super. I bought a rack of maybe 8 chops and cut in 2's and made 1/2 of it. No I did not weight the meat. I never do because I usually buy everything in 4 oz. portions at the stores where I shop. Because of the bones I just estimated. I browned the rack on all sides then put the pan in the oven to cook the insides for about 10 minutes on 450. They were pink inside. Good luck and enjoy.
