If looking at food can make you gain weight, I gained 3 lbs just looking at the pictures! Yummmm! :P

I have done those as well as the buffalo chicken Pasta muffins, enchilada cupcakes are my fav., I have also had the zucchini tots and the zucchini squares - both are super tasty. Have made chicken parm. casserole and layered pasta bake. Have not had a fail from that website yet. All the muffin tin ones can be frozen and are great for lunches.

I may try the chicken piccata tomorrow.

I found a similar recipe for those meatballs that includes some blue cheese and green onions but I have to agree with you that they are super yummy and very filling. I made a batch of 60 and popped them in the freezer. A minute in the microwave and they are good to go. I'm hooked on EmilyBites too!

Chicagoland so I suppose I won't be coming for dinner tonight but thanks for the invite! I don't have time to cook every night either...another reason I live EmilyBites! I'm craving pizza burgers so I think a pizza meatloaf cupcake may be part of what I cook this weekend!
