Did someone say shortbread?! AND low-carb?!? More details pls: was it comparable to hones-to-goodness shortbreads? I have yet to come across a keto/low-carb recipe that can stand up to my high dessert standards, lol. Looks really good though! #yummmmmer -

So I’ve been way off track for the last week with my eating. Not following my rules. So today I’m getting back on track starting with a 5 day pouch reset diet. Then back to Keto because it was working. -

Random food the last week(?) or so. All keto. The mini bagels also happen to be vegan! Cough @GreenTealael cough. Also, I didn’t get that job I interviewed for but I wasn’t willing to take a pay cut either so. Their loss. -

Breakfast bagel: This keto bagel was drier than I remember so it took me 35 mins to eat it. I usually don’t eat anything for that long (I give up from boredom) but I wanted to actually eat a real meal at an appropriate time today. Last night my BF asked if I was on my cycle already because I was eating jalapeño kettle chips at 11pm 🤣. The problem was I delayed breakfast to 2pm because I was busy and it extended my meals late into the night… so no more of that! -

Per husband’s request, a keto take on chicken parmigiana (no breading on chicken). It was delicious with Caesar salad. I had one small chicken breast cutlet with the sauce and cheese, plus some salad. 😋😋 -

Yumms. If you Keto-ing, have u tried pork rinds/cracklins/chicharron as breading alternative? Its actually pretty good! High in fat, yes, but still yum 😋 and Keto appropriate. -

It sounds good, but alas, I am lazy. So much easier to not bread 😂 Also, I do not eat keto, just husband. The stuff I make for him is generally too rich/fatty for me. This was a good one for both of us to enjoy.😊 -

Hi folks been a while. i figured I’d check in let you know what I’ve been up to and tell my story. Start with Stats: 5’9” surgery date Feb 20th surgery weight 255 today’s weight: 208 47lbs gone forever. Activity levels. I’ve been hitting the gym lifting weights for 20-30 min a day every morning. Now, you guys aren’t going to like this part. After 3 weeks liquid diet I went straight to high fat low carb Keto diet eating solids meats. Mainly grilled chicken, steak, sausage etc. I emphasize high fat low carb. I average max 50 carbs a day from any source, period. That includes sugars and veggies. I have coffee with half and half every morning. I eat protein via meats, nuts, and supplements primarily. Daily calorie intake is 600-800. I weigh myself daily, and log the weight to track it religiously. I expect to have lost 50 lbs prior to my appointment with the surgeon next Monday. I don’t have so much of a goal weight, but goal measurements. The below pics are me 7 years ago prior to changing jobs and becoming more sedentary. I weighed 200ish lbs back then. I don’t have that level of muscle anymore, but the goal is to get back to being as fit as that, but much smaller. There is no way I’ll ever be able to eat the calories required to be that big again. Point of all this is to say, everyone’s journey in this started and will end in different places. Make the beSt of the choice you made, and know that there is always a way, when you have the will to make the change. Stay positive, stay healthy, and make smart choices. RocketMan -

I make a quart jar of this up at a time, then keep it in the freezer like Panko. It works obscenely well on everything breaded. I'm very biased with my recipe cuz although it uses more ingredients, each one adds to the experience to make it more like the real thing. https://fluffychixcook.com/keto-crumbs-low-carb-gluten-free-breadcrumb-mix/ I then use either a light coating of mayo to adhere them or I mix some mayo into egg whites to adhere it. And if you want to try double breading, I use whey protein powder mixed with a little parmesan as the first coat. The other tip is instead of rolling the meat in the breading, I use an empty Tone's Parsley bottle (big) that has big holes in it and shake the breading over the "wet" surface of the meat/veg. Here's the recipe index page if you want to look at some of the bread/tortilla/cracker recipes. Back in the day I was known for my bread-like subs along with the tortillas, crackers, cornbread, muffiny, cakey things. https://fluffychixcook.com/recipes/recipe-index/ -

Yesterday's Dinner: Coconut Sweet Potato Curry w/ KETO Bagel Chips. The chips would have been better if they were thinner, and were pretty filling, or maybe I just felt bloated after, not really sure. Ate all the chips, and about 2/3 of the curry. 202 cals - 7.2g NET carbs - 15.3g Fat - 6.5g Protein -

I used to make a lot of gluten free single (or near) serving low carb breads and "protein mug/cake". Here's the recipe index. You might like them. They were pretty awesome tasting. Not necessarily the best for weight loss for me personally, but I maintained like a champ with 'em! http://fluffychixcook.com/recipes/recipe-index/ Keto Chocolate Cake: http://fluffychixcook.com/keto-chocolate-cake/ -

Same here! And dumplings 🥟 but this was the bf’s craving this time. When I’m craving something I’ll usually try to find a healthier way to make whatever it is I want or have a bite or two. A while back I was craving dumplings/gyozas like crazy so I found this recipe: https://www.lowcarbingasian.com/keto-japanese-potstickers-gyoza/ Gyoza with soy paper! Maybe you can use the soy paper concept and make the filling more wonton like? -

I’m down 83.6 lbs since August 7th, bouncing around atm around the 168/170 area. I was diagnosed with Hashimotos recently. So that stinks. I can’t do Keto because of it. And I’m too poor to afford AIP Paleo at the moment. We have $20 to last the next 2 weeks for 5 of us. Hopefully tomorrow we get some good news, we do have some food stores but running out of that pretty quickly. Once we get back on our feet though Im going to try AIP Paleo -

I was going to post this last night, but I fell asleep..lol... I hit my goal weight yesterday morning at 159.8 I am officially at a healthy BMI !!! I wanted to post it here on our thread. I am so thankful to all of you for your support through these last five months. It has been a wild ride for me with many changes. I started it out thinking I was going to stay on a low carb keto type diet because I believed that was what I needed to keep my type 2 diabetes in remission. I was afraid to try anything different, but when @Newme17 posted about the book she was reading, "Proteinaholic", I decided it was time to do research this further. Since reading that first book I have devoured several others on the subject of diet. "The Cheese Trap", "How Not to Die", The Starch Solution", The Omnivore's Dilemma", and "The China Study". What I have learned is that the closer we can get our diet to eating WFPB (whole foods plant based) the better off we will be. My diet is about 90% WFPB with the other 10% being diary and a little fish/eggs. I eat a ton of salads, beans, veggies of all types, whole grains, and a little fruit. I should eat more fruit, but I just don't seem to gravitate towards it..lol.. I still don't eat much bread at all. I just don't have room in my stomach for it or much pasta.I feel so good eating this way. I have lots of energy!! I have noticed a slight increase in my blood sugar the past 2 weeks, but it is still in the healthy range and no medications!! I want to point out that our bodies were designed to process carbohydrates for energy, that is why we have a pancreas and insulin. This is our bodies first choice for energy and as long as we are eating healthy complex whole grains we are giving it what it needs to thrive. The other big change has been running. I never thought this would be the case for me, but since I hate going to the gym I needed to find an exercise that I would love doing. I guess running was a good fit because I look forward to it everyday. I know I would not have been this successful without the awesome support of everyone on this forum. All of the veterans who still post here and others, @Berry78, walking this same journey. We are all different, but have the common goal of getting healthy and changing our lives for the better. Where are you @Sweet as peaches? I miss you and would love to hear how you are doing. Now onward to the next goal. I want to hit 155 and run a half marathon. The truth is I will be happy if I never lose another pound, but I want to keep getting better with my fitness. Happy Saturday everyone!!! Be Blessed!!! -

Has anyone looked into the lower calorie options in the factor75 meals. They are not cheap but they are prepared but they are fresh and they have vegan and keto options as well. I assume this would be an option to consider for those in maintenance for busy nights but I’m not the greatest at reading labels. I am currently looking into converting to SADi and just want to get started with something while I do my research and the insurance process (I was sleeved 3/9/21 and gained the weight back). I never did learn to understand all the macros and stuff the first time around which I’m sure contributed to my regain. I’m am just curious if anyone who understands all that has researched them and has any feedback about them. -

@Megan Sadler I'm doing very low carb and low fat too. My doc said to NOT do actual Keto b/c it's high fat. I'm just focusing on protein. I eat a lot of shrimp. Alot of the keto recipes can be converted to low or mid fat. I find that protein is for the most part keeping me satisfied. Depending on the time of month, I've gotten kind of snacky a few time. I need to turn that off! I have been collecting recipes here: https://docs.google.com/document/d/1LoPqBWnVn3ZejFugIvfmSsTIUmi1iBNk6zo4gbCxUFc/edit?usp=sharing I think that is the link to let anyone have access to the file. -

You're doing fabulously, Recidivist! And like you say, men do tend to lose weight a lot quicker than us ladies do... (all you have to do is look at The Biggest Loser to see that!) And to be honest, I think you 'earned' your quick loss with the complications you suffered early on! You had a real rough run of it for a while there, so it's so nice to hear you're doing so fabulously now! ❤️ My dietitian doesn't like the idea of Keto. *sigh* I'm not sure what to do about it. Since cutting out carbs I've dropped quite quickly -- about 5 kilos in the past two weeks -- and I just feel more satiated going for higher-fat options (and a lot less hungry now I've cut out carbs almost entirely). We're quite spoiled here in NZ with our meat choices. The last two Sundays I've roasted a full leg of lamb, spiked with rosemary and garlic. I eat hardly any of it, but my husband and I munch on it throughout the week. It's delicious! Especially cutting off and eating the salty, fatty bits straight from the oven... nom! Hehe. All of our meat here is also grass fed, which is a big bonus. It still boggles me that you'd feed a cow anything other than grass... you don't even have to leave our biggest city, Auckland, to see moomoos snacking on grass! Yesterday hubster and I grabbed a couple of coffees and watched the planes come in to Auckland airport next to a small herd. -

This is my current venture for the next few weeks. I’ll be getting the tiny avocados at Trader Joe’s, and making the salmon separately, adding in some protien powder to boost the content. T look into whole 30, and Keto recipes I’m not a fan of Keto but it’s low carb. Paleo is also good. Whole 30 doesn’t allow sugar. They’re about taking control of food. We didn’t get here by being in control. I didn’t do this surgery to hate food. I love it, I just need to be in control. -

I understand to an extent. I feel many days as if I’m “behind” because of how slowly I’m losing. Almost 5 months out and I’ve never had one of those weeks where I’ve had a “whoosh” and I’ve never been able to “cheat” and get away with it. If I eat off plan for even a meal I’m stalled for a few days and there are times when it’s bitterly disappointing, but at the same time I’m thankful for it because my body just plain isn’t going to allow “easy”, ya know?? I started right at 40% BMI..... and quite honestly if I hadn’t buckled my knees and slumped slightly at the beginning of this process (my bariatric clinic has my height as 5’5” when it is in actuality 5’7”) I would’ve been denied by my insurance because I would’ve been 6 pounds “too light” What a joke. Too light, my butt! I was almost 255 pounds and a frickin size 22!!!!! Because I was on the 40% borderline for 6 months I never could get into a healthy eating routine. So many times I read about how people lost 50+ pounds pre-surgery and that they were already in a keto or low carb mode and here I was strapping on 3 pound ankle weights before going into the clinic because I was scared to death I might have lost some water weight and I didnt want to be disqualified. When I went in for my pre-surgery class 17 days prior, I had lost a total of 3 pounds in the 6 plus months leading up to this and it was so liberating to FINALLY be able to eat how I knew I was going to need to for the rest of my life, but I felt so behind everyone else because I dared not lose an extra 5 pounds. So here I am almost 5 months post and thinking that this whole process started almost a year ago. Even though I’ve lost 62 pounds since surgery (and 75 from my all time high weight) I feel as if I still have so far to go. All of my family and friends (with the exception of my dear husband who will support me no matter what) are cautioning me to “not take this thing too far” My brother-in-law now refuses to say my name. He will say “hey, skinny!” while addressing me while ignoring the fact that my sister his wife is still probably a size or two smaller than me. I’ve been a 135 pound adult woman and to be almost 50 pounds heavier than that still is annoying. It might sound bratty, but I need to see a number somewhere south of 150 pounds before I will consider this surgery a success. -

Regular lasagna for the fam (left) and a zucchini noodle lasagna for me (right). Also some Keto Crispy Buffalo Cauliflower Bites (used almond meal for the breading, but I did use some honey for the sauce...) Didn’t actually have have any of anything on the table cuz I stuffed myself with all the tasting while I was cooking, lol. Im estimating I probably took in about 300-350 calories doing this 😂
