This recipe is being shared from Bariatric Pal
Craving bread? Fill that craving with this declicious and almost carb-free cloud 'bread.'
Cloud bread can be used as a snack or part of a meal.
Note: This recipe makes about 10 peices of bread. Refrigerate leftovers.
Ingredients:
3 eggs, separated
3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese
1/4 teaspoon cream of tartar
1 (1 g) packet stevia or your favorite sugar free sweetener
Directions:
Preheat your oven to 300*F.
1. Separate the egg yolks and whites into two separate bowls. Make sure that no yolk mixes with the egg whites.
2. In a large bowl mix the egg yolks with the cream cheese OR cottage cheese until well mixed.
3. In a separate bowl add the cream of tartar to the egg whites. Using a mixer (egg beater), mix the egg whites and cream of tartar until they are fluffy, white, and form peaks when you remove the beaters.
4. Fold (don't mix) the egg yolk mixture into the egg whites. Do this slowly and gently so the mixture remains fluffy (this is key!).
5. Take about 10 even scoops (about the size of a freshly baked cookie when placed on the pan) from the mixture and place them on 2 lightly greased cookie sheets (Cooking Spray works well).
6. Place on the middle racks in your oven and cook for 20 to 40 minutes until they are golden brown. Time varies depending on the size of your cloud bread and your oven, so keep an eye on them!
7. Remove from oven and let cool at room temperature.
8. Once cooled, place in a plastic bag or tupperwear and place them in your refrigerator overnight.
Note: It takes a few hours (overnight typically) in the fridge to get to the consistency of bread. If you try them too soon, they will crumble.

I put together a "recipe" book from all the old posts on this site, I hope it helps. I have tried a few of these. Among my favorites is the tuna Casserole.
Ricotta Bake
Ricotta cheese
1 egg
Tomato sauce
Mix then top with mozzarella cheese
Bake for 20 minutes on 425
Crab salad
Crab meat
1tsp garlic powder
1tsp onion powder
1T of mayo
3t lemon juice
Salt and pepper to taste
Protein pudding
1 ¼ cup soy milk
1 scoop Protein your choice
1 small box sugar free instant pudding
Tuna Casserole
6 oz. tuna
1 egg
2T Greek yogurt plain
2T cottage cheese
Garlic & Onion powder
Cheddar cheese grated
Blender it all and put in cupcake tin; Top with cheese and bake 20 min at 350
Quiche
1 egg
3 T Ricotta
1 T grated cheese
Mix egg n ricotta top with cheese
Bake 20 mins at 350
Cinnamon Roll Cream Cheese
Low fat cottage cheese
sugar free vanilla Syrup
Cinnamon
Blend then eat
White Beans w/garlic
1/3 c navy Beans
2 t olive oil
1 t minced garlic
2 t balsamic vinegar
2 leaves fresh basil
Blend and eat
Faux Cheesy Potato
½ cup cauliflower steamed till soft
1 t cream cheese
1 T grated parmesan cheese
½ t minced garlic
1 t butter or butter substitute
salt and pepper to taste
Combine and puree
pumpkin Pie Custard
¼ can pure pumpkin 15oz.
¼ c skim milk (or soy milk)
1 eggs
Pinch of salt
½ t vanilla extract
½ t pumpkin spice
¼ t liquid stevia
Blend ingredients then pour into ramekin. Bake 20-30 mins at 350 until knife comes out clean. Set aside and cool, and then chill.
Pumpkin Pie Puree
1 c cottage cheese
3 T pumpkin puree
1 t pumpkin pie spice
1 scoop vanilla protein
1 t sugar free caramel syrup
Blend until smooth.
Apple Pie Puree
1 c cottage cheese
3 T mashed cooked apple
1 t cinnamon
1 scoop vanilla protein
1 t sugar free caramel syrup
Blend until smooth.

I lived on this recipe for weeks and weeks till I got burned out on refried Beans.
One of my favorite Mexican foods.
I got all the ingredients at Walmart. It cost about $4 for 2 days worth of meals (4 - 6 meals in my case). It's very filling and sticks with me.
1 lb of chicken breast.
1 pkg of Taco Bell Taco seasoning.
(I tried other name brand taco mixes and the store brands, Taco Bell tastes the best and is just as cheap. There is a Taco Bell chipolte version as well, but I liked the regular version the best. )
1 can of gebhardt refried Beans w/fat.
(I tried the non-fat version and I like the fat version better. It only has 2grams of fat per serving.)
Salsa or Picante or Taco sauce to taste
1 pkg of your favorite shredded cheese.
I grill the chicken breast and run it through my food processor.
Mix the taco seasoning with about 1/2 cup of Water and mix it thoroughly. I mix it in my Protein shake shaker.< /p>
Toss the chicken into a pot or pan and add the taco seasoning.
Bring it up to a boil and then reduce the heat to a simmer. Let it simmer for about 20 minutes.
Mix the chicken and beans in a bowl. Add some salsa if it's too thick for your taste.
Spoon some of the mixture into a bowl and top with cheese and salsa.
