Broccoli and Cheese Soup

blogs/blog-0813520001376245331.jpgBroccoli and Cheese Soup Cooking Spray, 1 large chopped onion, 2 garlic cloves, minced, 3 cups chicken broth, 1-16 oz package broccoli florets, 2 1/2 cups heavy cream, 1/3 cup all-purpose flour, 1/4 tsp black pepper, 8 ounces cheese of your choice. Preparation: Heat a large nonstick pan coated with cooking spray over medium high heat. Add onions and garlic; saute 3 minutes or until tender. Add broth and broccoli. Reduce heat to medium; cook 10 minutes. Combine cream, flour and pepper, stirring with a wisk until well blended. Add cream mixture to broccoli mixture. Cook 5 minutes or until slightly thick. Remove from heat and use immersible blender until smooth, or use food processor. Add cheese, stir until melted. Makes 6 - 1 1/3 cup servings.

Looks good--wonder how it would be subbing the cream for milk or almond milk? Would be pretty high in fat.
