Have you found a good Vegan Protein? You will definitely need one. I use the one I linked below, the French toast and chocolate are bomb.

Otherwise, you need to ask your doctor what vegan food he will allow that you can make work. The biggest obstacles you will have is getting enough protein in. you need to hit 60-80 grams.
