Pasta Replacement!

I found this in a kroger here in galveston. i KNOW they dont have it up north but if you can find it, you can use it JUST LIKE SPAGHETTI!

seriously, this meal tonight is one of the most satisfying meals ive had since being banded.

its tofu. its shaped like Pasta and has roughly the same taste and texture as cooked spaggetti. this brand is called shirataki tofu and is produced by House Foods. i got it in the fresh produce section where they have all the tofu and textured soy products.

tonight i cooked three oz of ground turkey with a tablespoon olive oil and a couple of pinches of fresh oregano. added enough ragu to make it look good, drained a serviing of the tofu shirataki, microwaved it for a minute over a paper towel, plated it.

next to that i opened and cut up one and a half oz of armenian string cheese and about the same amount in sliced bosc pear.

outstanding dinner, i highly recommend it. just dont eat it really fast like we used to do spaggetti, eat slow and enjoy!

I kinda avoid tofu cause I dont like the way it looks. I have a chinese restaurant I go to that puts tiny chunks in the egg drop soup and I hate it. I know its not the taste it is the texture I cant stand. It really doesnt take like anything but it looks like tiny sponges in my soup and makes me mad. I know it is really good for you I just cant take the step to experiment with it. This moch spagetti might be the ticket to get me on the tofu band wagon, thanks for the post. I might just suck it up and try this one out!

hey thanks insub!

let me know what you guys think, and if theres anything else you guys find...please pass it along! they also had it shaped like egg noodles too.

I tried tofu chunk and cut it up to substitute for meat in sweet & sour dish. Was my first experience with tofu, and I wasn't pleased. Taste wasn't terrible, but didn't make me smack my lips.. the texture really threw me off though, didn't like that. It's like a sponge to me too. Are the noodles spongey??

I'm willing to try tofu again, in fact I still have some.. just haven't been brave enough yet.

I know what you mean - tofu is bland, weird and white!!

For me, we like the firm tofu, the type in Australia you get at the Asian Grocers.

I do this with it to make it tasty and meat-like:

BBQ it - no oil though - I marinate it with the normal stuff. I cut into 1/2" slices and it goes sort of chewie and delish - we brought up four boys who adored this way of tofu.

Mash and make it into burgers - again, slow cook, lots of seasoning and its chewie like meat.

HTH

I have tried these noodles, but have a hard time getting past the fishy smell. I love tofu but these smelled even after I rinsed them and cooked them. Maybe I am oversensitive to the smell?

trystell, did you rinse them? i had to rinse them in a strainer, pat dry, rinse again, then microwave. After they came out of the microwave, i added a couple of tablespoons of 'i cant believe its not butter' and a little garlic pepper. its the liquid that smells so bad. the 'noodles' will absorb any flavor they are around.

Coo! i love that idea. i never thought of bbqing thembefore! im going to try to mash them up and make burgers out of them too.

Ive cut up the extra firm tofu into small patties, marinated them overnight in balsamic vinegar and fried them in olive oil. i like them that way with tomato slices and basil.

my neighbor is having a bbq this week, and im going to try bring some to bbq.

When I did Atkins years ago, I would substitute spaghetti squash for spaghetti. But tofu spaghetti?! I can't believe it! I will definitely give it a try once I'm at that stage. I'm sure the tofu has a ton of protein and must be very filling. What stores have you found carry it?
