Cinco de mayo/easter food ideas!

Hi there! I am currently 3 ½ weeks out from vsg surgery. I'm going to a big party next week for cinco de mayo/Easter (weird combo, I know - but we didnt see each other on Easter!). I want to bring an appetizer or side that fits with one of those themes that I will be able to eat.

I will still be on purees, and I'd like to bring something that isn't spicy. Any ideas?

    You will probably only be eating about 1/4cup of volume. So make a layered bean dip with yummy avocado on top. You'll be full after 3 bites.
