Thai spring rolls

Has anyone tried/done well with thai spring rolls? I was thinking of using just the rice paper and not the rice noodles. Stuffing them with a "salad" of shredded chicken or chopped shrimp, avocado, small amount of carrots, Water chestnuts, lettuce and mint.

We used to really like them before. I have been released for all foods and I want to start making meals my husband will eat too, so he doesnt rely on FF.

Ive made them before. if you are ok with the calories/carb content...go for it. warning they can be hard to work with/tear easily and you have to keep them moist while you work. good luck!

I'm not supposed to try raw veggies for quit a while. Some people that months to tolerate them.
