I've heard the term eating around the sleeve before. I just want to make sure that I'm not doing it. One of my friends made me a special batch of beef jerky. He made it using Stevia instead of his usual brown sugar. It is a little high in salt because he uses a quarter of a cup of salt for every gallon of water. He sliced extremely thin and let it sit in the brine for 7 days before smoking.
