Syntrax Nectar - Popsicles

I was wondering if anyone has tried to make popsicles with Syntrax nectar or some similar Protein drink? Can anyone think of a reason that freezing would be a problem - or effect the protein?

Just trying to see if I could come up with a popsicle that would provide protein too - since I seem to be somewhat addicted to sugar free popsicles.

Thanks!

Kristen
