Herbs and Spices

Now that I'm trying to eat cleaner and preparing more of my own food I am experimenting with herbs and spices.

How do you use herbs (fresh and dried) and spices? Do you have any favorite herb mixes? What are your staples and how have you used them in the various post-op phases?

Have you gone to Williams Sonoma or a Fresh Market or Whole Foods? Those places normally have fresh herbs and many times recipes to go with them.

Williams Sonoma has different sauces, salts, etc. that you can also try to spice up your food. Whole Foods has several items not normally carried elsewhere, and there are items you can try on the salad and hot bars.
