I haven't had surgery yet, but I am on the pre op diet. One of our favorite recipes is half the spaghetti squash width wise and put face down in the crock pot, add a jar of low fat (or in our case, we make our own) spaghetti squash, and I like to add diced chicken. Cook on low for 5 hours. YUM!

I tried making spaghetti squash once and found it difficult to make. I recently picked up a vegetable spiralizer from Amazon for less than $10. I've made yellow squash and zucchini noodles with that and it works great. Takes less than 5 minutes start to finish. Totally works in place of pasta.

I should correct my post, I loved it before surgery. I have not tried it yet. I am only 6 weeks out and don't know when I can try again.
