Cornedbeef cabbage?

Anyone post op over 4 months have trouble with this? The meat I don't struggle with. With StPattys day coming I was hoping to enjoy a little of this Irish favorite.

I have no issues with red meat so I may make this. However, corned beef can be fatty if not trimmed well. That bothers me so that is something I would watch for.

there is a difference btw the point, round and the flat - the flat is leaner - the round is leanest - and the point is the most flavorful but it’s the fattiest - you gotta cut that stuff like a surgeon after it’s cooked

The best way we cook it is in the oven - LONG AND SUPER SLOW - and we save the drippings and cook the cabbage in that - which is the irish version of greens (if you know anything about cooking greens)

I made it tonight for my husband... I just smelled it, yum. I like the oven method too but today I cooked it on the stove with a Guinness for 6 hours...
