Here is great clip that describes the bougie:

They will insert it into your tummy through your mouth and it will guide the staple line. Done correctly it assures they wont undersize your tummy, amoung other things.

I have read some papers that suggest your doc should measure the length of your stomach before deciding on the diameter bougie they use, but my doc was unaware of it - most are, really.
