Recipes- Sources For Fat,calorie Reduction/replacement

I am newly banded and about to start "Real Food" I have recently become VERY interested in making recipes lighter. Not really just following a low fat recipe but experimenting with regular recipes to see if they can be made in a overall reduced manner. Okay so I have a long history of the Low fat idea,(ie low fat cottage cheese, yogurt, cheeses) what I am looking for is a guide as to what can be substituted for the higher fat items in a recipe. Such as splenda for sugar. They are not created equal. (tried a Pumpkin Bar that came out like a Pumpkin sponge yesterday!)

Long story short has anyone found good books, or online resources for such information?
