    Meh, I usually only get the shakes when I eat too much sugar and alcohol is involved. My liver having to break down glycogen for stabilizing blood sugar while having to activate alcohol dehydrogenase at the same time doesn't seem to like that. And now guess what combo I had today, lol.

    I don't seem to learn that lesson, too, but I'm prepared to experience the late dumping and don't do that kind of thing in the evenings but at noon or early afternoon so I get any adverse reactions during the (early) evening and can react accordingly.

    Oh no that’s horrible :( but it could be worse? I’ve read that a lot of wls patients feel like they are dying. For me if I do get anything it’s foamies, or I throw up within minutes. But after that, I’m good.

    Eating the tart is the likely culprit to my evening of nausea, cold sweats, & lethargy. I spent pretty much the remainder of the day on the couch oscillating between feeling death-y and sleeping. Lesson learned? Probably not. 🙄

    Uhhhh I feel you !😩 I’ll be visiting my bfs giant Portuguese family tomorrow and I know these will be at the get together. Such a weakness! Thankfully I don’t get sick from eating them but I do feel guilty 😅


  3. So my vegan journey hasn’t been going good 😅 I haven’t met my Protein goal since I’ve started so I bought a plant based Protein Powder to help. My nutritionist said she thinks my decision is extreme and that I need to find a balance and just cut down the animal product so I’m going to listen to her. I’ve basically been having vegan tostadas, scrambled tofu, Cereal, and green smoothies for the past few weeks. Last pic was Father’s Day.... and I resisted then too. If I’ve learned anything from this experiment it’s that I have more self control then I think.

    Ingredients:

    • 1-2 bunches of cilantro (Put cilantro in a blender with a little Water and blend until its completely broken down)
    • Rice
    • chicken (any cut)
    • Mixed veggies (Peas, carrots, corn)
    • 1-2 Red bell peppers (cut in long pieces)
    • Aji Amarillo (a couple tablespoons)
    • 1 onion & a couple garlic cloves
    • Seasonings: S&P, cumin, garlic powder, a dash or two of turmeric, adobo (optional)
    • 1 chicken bouillon cube
    1. Lightly season the chicken with the above seasonings minus the turmeric and then pan sear them until they are half way cooked and have a nice golden color.
    2. In a rice pot, add some oil and fry the onions and garlic. Once they are half way cooked add the aji amarillo and fry for or minute or two making sure you are constantly stirring the mixture.
    3. Season the mixture with all of the above seasonings and add the chicken cube. If the mixture starts drying up and sticking add some water and then after another minute add the blended cilantro and cook for 2 minutes or so.
    4. Add the chicken to the pot and then add some water (enough to cover the chicken to the top. Let the chicken cook until done.
    5. Once the chicken is done, remove it from the mixture and set aside. Scoop out any oil or grease you see come up to the surface.
    6. Add your mixed veggies, bell peppers, add enough water depending on how much rice you are making, then add your rice and mix.
    7. Check to see if the mixture needs salt. Cook the rice as you normally would and once the rice is done turn off the stove and add the chicken back to the pot leaving it on the surface and cover the pan letting the steam do its work.
    8. Done!

    Here's a link of how to make it. Its in Spanish but you can see how everything is suppose to look like. She adds some black beer which is normally used in this rice but I do it without. She also adds some blended spinach to it but I like a stronger cilantro flavor so I don't add that.

    Not sure if you wanted the papa a la huancaina recipe (yellow cream potato app) but here it is either way:

    • Blend together half of a pack of queso freso (I use Mexican, Salvadorean, or Guatemalan because Peruvian cheese doesn't exist here), a drizzle of olive oil, some evaporated milk, a couple saltine crackers, salt, and a couple spoons of aji amarillo and that's it.
    • The consistency should be somewhat thick and serve it over boiled potatoes.

    Ok so this is aji amarillo. Its definitely essential to making the rice and it wont come out the same if you decide not to use it. I believe Amazon has it too. Its spicy so be careful when using it because I found that some jars are spicier than others, ESPECIALLY when you first open the jar. Just add to your desire taste.

    Oh and I highly recommend doing the salsa criolla (onion mixture). Its basically purple onions mixed with lime, salt, cilantro and a chopped hot pepper of your choice. I cant eat this meal without it lol

    To be honest I’ve always felt the same way about vegan meals lol But I’m determined to change that!

  6. Last nights dinner: I made arroz con pollo peruano (Peruvian rice and chicken) with a side of papá a la huancaina (creamy yellow potato app) and salsa criolla (spicy onion lime mixture) for my bf.

    Normally I would pick at what I cook for him but since yesterday was day 1 of my vegan journey I made tostadas for myself instead. Ingredients: puréed black Beans, avocado, soy chorizo, pico de gallo, lettuce, vegan almond cheese, and habanero sauce.

    For today’s Breakfast I’m having a tofu scramble with onions, mushrooms, scallions, spinach, tomatoes, and avocado on the side.

    Ahhh I need to to be like you! That’s great you have one everyday! I find myself having salad throughout the week and then I take a break and have something different the next.

    All the doctor said was to try to cut the amount of meat and animal products in my diet. I’m assuming it formed because I eat more meat now vs prior to wls


  8. Korean BBQ w/ my bf this past weekend. We ordered spicy pork, shrimp, marinated thin beef, thin sliced pork belly, and beef tongue.

    I am saying goodbye to meat for sometime now and thought this would be a good way to end the relationship 😭 Ever since my kidney stone scare I’ve been thinking a lot about my health and I’ve never had a problem even when I was 140 pounds heavier. I’m going to try to go vegan for a bit and see how that works. Before wls there was a point where I was a strict vegetarian for a year but that was easy because I ate a lot of eggs lol Let’s see how long I can go 😅

    P.S. Im with you though, i still shy away from rice (surprisingly haven't had any since surgery - 1.5+ years! ...and i used to have it almost every day. I even went from a sushi and maki lover to a sashimi lover lol)

    Wow! 1.5 years!? That’s incredible! I don’t normally have it but I will admit I do take bites of it while I cook lol and I’ve tried to switch to sashimi but I end up throwing up 😭
