I am on phase two of the diet and I can have mashed potatoes. I cooked about three organic potatoes till soft then mashed them with some almond milk and used Mrs Dash for seasoning. After mashing them I used my hand blender to whip them up to a nice soft fluffy consistency. I opened a can of cream of chicken soup (low sodium) to use to put on top of the potatoes like gravy. I measured 1/4 cup of the mashed potatoes and put it on a plate and put two spoons full of cream chicken soup on top..... it went down well and very satisfying but it doesn't stay with you long unless you add a small wedge of laughing cow soft cheese to the whipped potatoes. I stored the rest in the refrigerator and have made two meals with this already. I eat this sparingly and i think the carbs in the potatoes might slow weight loss. i only eat it once in a while.

Also when you mash and whip the potatoes you can add a wedge of laughing cow chesse to it..... there you go your mashed potatoes and cheese.... but no butter in the potatoes please. just mashed potatoes milk and cheese..... but you can only have 1/4 cup or maybe 1/2 cup at the most per doctors recomendations on the phase of the diet. I found the potatoes very satisfying but of course i don't eat that every day.
