So I haven't updated in a while but I am still here. It will be 10 weeks tomorrow since I've had my surgery (May 7th). It was tough in the beginning but I think I have hit my stride. I am 69 pounds down and everything is loose including my clothes . I am eating well (even though my body does allow me to eat sugar) but I make the choice not to eat it. Started working out during the week which includes Water aerobics twice a week, the elliptical three times a week, and weight training three times a week. I have started hiking again which I so missed and I walk around my place or the river when I can. I love being this active and I can tell the difference in the way I walk and sit. My goal is to be 100 pounds down by my August 21st post-op appointment. Of course it's a goal and if I don't reach it then I will shortly after. Still not able to cross my legs but I will be there soon.
I hope everyone is doing good. I don't have any pictures yet but hope to have some posted in the next few months.

I had my rny on August 8th, 2012... Starting weight 271, current weight, 178... I've been at a standstill since about March... I try so hard to get to my goal weight of 160, and I can't get below 178!! It's really frustrating. I know I have come along way, a really long way, but i still struggle with my appearance, when I look in the mirror, I still feel "fat" I don't feel like I'm any smaller. I know I am, but my brain doesn't recognize it, and I'm hard on myself. I went from a 22 pant, to size 11 and 2x shirt to a large. It feels fantastic! I just hope that I can continue to push forward and lose these last few pounds!

So I made this for the family last night. Mind you I'm still on pureed foods (Hopefully soft starting tomorrow)
I made a large cookie sheet and based it on two slices per person serving 6 people
1 whole cauliflower head
4 cups of shredded mozarella low fat or fat free ( I used low fat)
8 egg whites
2 tablespoons minced garlice
2 tsps italian seasoning
Toppings - I used sliced plum tomatoes, fresh chopped basil and some sauteed fresh spinach leaves
So first you need to rice your cauliflower. This means you need to put it in your food processor and process until it looks like a rice consistancy.
Next I cooked the cauliflower in a microwave safe container for about 9 minutes
Mix in together the cheese, eggs, garlic and seasoning then combine with the cauliflower.
Generously grease with PAM a large cookie tray or two small pizza trays
Spread cauliflower mixture evenly onto pan
Cook at 450 for 15 minutes
After removing the Pizza Crust I added my toppings and sprinkled a little extra cheese on top... cook for 1-2 more minutes until cheese melts.
1 slices each - total calories 114
total fat 6 gms
total carbs 3.5 gms
total Protein 14 gms
total surgar .5 gms
cholesterol 40 mg
You could cut down the fat by using fat free cheese instead of low fat

Drum roll please...MAY 22! I'm so excited! Will be starting my preop diet the Wednesday the 8th. My birthday is the 27th and I can't think of a better gift than Life!!
