    Healthy Fettuccine Alfredo
    Author: Pinch of Yum
    Prep time: 15 mins
    Cook time: 15 mins
    Total time: 30 mins
    Serves: 8
    Ingredients
    1 lb. uncooked fettuccine noodles (I USE DREAMFIELDS OR LOW CARB/WHOLE WHEAT PASTA)
    3 small heads cauliflower
    6 cups vegetable broth
    6 cloves garlic, minced
    1 tablespoon butter
    1 teaspoon salt
    pinch of nutmeg
    pinch of black pepper
    1 tablespoon olive oil
    ¼ cup heavy cream
    1 cup starchy boiling Water from Pasta pot

    Instructions
    Chop the cauliflower. Bring the vegetable broth to a boil over medium high heat and add cauliflower. Cook until cauliflower is soft, about 15 minutes. In my experience, the longer you cook it, the smoother the sauce will be. Meanwhile, melt the butter in a large skillet over medium heat. Add the minced garlic and saute for 4-5 minutes or until soft and fragrant.
    As the garlic and cauliflower are cooking, bring a large pot of water to boil and cook the fettuccine according to directions on package, reserving some of the starchy water to add to the sauce later.
    Transfer cauliflower to a blender with about 2 cups of the broth. You may need to do this in batches depending on the size of your blender. Add the sauteed garlic, salt, nutmeg, and black pepper and puree until very smooth, about 5 minutes. Once the mixture is moving, stream the olive oil into the blender. Add more broth or water if the mixture is too thick to move through the blender. You want it to turn through the blender easily. When puree is very smooth, transfer back to the butter/garlic skillet.
    Add the cream and cook over low heat. Add the starchy pasta water (or regular water if you’re not making pasta) and keep warm until ready to serve. Combine noodles and sauce in a large pot or skillet and serve immediately.

    Notes
    The sauce will “dry out” a little bit as it cools on the pasta. Adding a little water to the leftovers will help make it creamy again. Serving size is ⅛ of the noodles with about 1 cup of sauce.

    Made these for dinner tonight- 1 was more than enough for me (plus salad). The other adults in my family each ate 2. We all voted this is a definite do again!!!! Portion controlled.
    Lasagna Cupcakes
    2 cup marinara sauce (I just used 1 jar)
    3/4 pound ground beef or turkey
    24 wonton wrappers
    8 ounces shredded mozzarella
    3 ounces Parmesan cheese
    4 ounces Ricotta cheese
    (optional) basil for garnish
    Preheat oven to 375 degrees. Spray muffin tin (12) with cooking spray.
    Brown beef and season with salt and pepper. Drain. Add sauce. Mix.
    Begin with a wonton wrapper and press it into the bottom of each muffin tin.
    Spread with a small spoonful of Ricotta cheese.
    Top with a little meat sauce then some parmesan and mozzarella.
    Use around 2 teaspoons of all the ingredients depending on your personal preference.
    Repeat layers ending with cheese.
    Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out. Garnish with basil (if desired) and serve.

    So I go in Wednesday morning (10/30) to have my sleeve done...the liquid diet wasn't too bad but now I start the Clear Liquids tomorrow. What kind of Protein can I get for the clear liquid diet?
    Next thing I want to know is, does anyone have the leg massagers that prevent blood clots and would like to donate them to me? I'm so serious about it. Aetna decided now that they don't cover them and more. Next question is the pain and the nausea...what should I be prepared to deal with?

    You will be a new you. I was sleeved on May 1. As of last week I have lost 103lbs. The new you will come on through when the fat wall come down. I like the new me and my new relationship with food. I am a food addict but not as much any more. You will see that it's not that important anymore!

    I have found that post op, I am more me than ever before. I never knew how much my size, my weight, my food addiction and my obsession with diet was masking who I really am. Just like the weight, it all slowly crept up on me muting the real me very slowly but in a very real way.
    Now I wake up every morning ready to be out in the world, thrilled to pick a pretty outfit instead of whatever will mask whichever body part I'm obsessing over, not fixated on where I might eat (or avoid if I am doing WWs, Atkins, fat free, etc.), not worried if my hair isn't perfect because God knows I needed something to detract from the size of my ass, wanting to be SEEN by people instead of hoping I didn't run into someone I haven't seen in months...I could go on for ages.
    I liked the fat me for who I was on the inside. I was always confident and happy. Now, though, I am thrilled with ME and the excitement I have as I evolve into a new, healthier being is just overflowing into obnoxious giddiness. Every minute of the day....

    I turned in my paper work sept 17 and I got my approval today AND scheduled for oct 30th....I'm so nervous!
