Tres Leches Cake
Low fat low sugar
Tres leches ("three milks")' date=' a cake drenched in sweet, milky Syrup and topped with meringue, has nearly overtaken flan as a favorite dessert in Latino restaurants. We lightened the traditional recipe by about 245 calories a serving by using lower-fat versions of the milks that give the cake its name.
Cake:
Cooking spray
1 tablespoon all-purpose flour
1/4 teaspoon salt
4 large egg whites
2/3 cup Splenda for baking
1 teaspoon vanilla extract
3 large eggs
2/3 cup all-purpose flour
Milk Mixture:
1 cup half-and-half (fat free)
1 (14-ounce) can fat-free sweetened condensed milk
1 (12-ounce) can fat-free evaporated milk
Meringue:
3 large egg whites
1 cup Splenda for baking
1/3 cup Water
1 teaspoon lemon rind
1 teaspoon vanilla extract
Preheat oven to 350°.
To prepare cake, coat a 13 x 9-inch baking dish with cooking spray; dust with 1 tablespoon flour.
Place salt and 4 egg whites in a large bowl; beat with a mixer at high speed until soft peaks form. Gradually add 2/3 cup sugar, 1 tablespoon at a time, beating until stiff peaks form. Place 1 teaspoon vanilla and eggs in a large bowl; beat until thick and pale (about 3 minutes). Gently fold egg white mixture into egg mixture. Lightly spoon 2/3 cup flour into dry measuring cups; level with a knife. Gently fold flour into egg mixture. Spoon batter into prepared dish. Bake at 350° for 20 minutes or until cake springs back when touched lightly in center. Cool 5 minutes in pan on a wire rack.
To prepare the milk mixture, combine the half-and-half, condensed milk, and evaporated milk. Pierce the entire top of cake with a fork, and pour the milk mixture over the cake.
To prepare meringue, beat 3 egg whites with a mixer at high speed until foamy. Combine 1 cup sugar and 1/3 cup Water in a saucepan; bring to a boil. Cook, without stirring, until candy thermometer registers 238°. Pour hot sugar syrup in a thin stream over egg whites, beating at high speed. Stir in rind and 1 teaspoon vanilla. Spread over cake.

Its not until December. I'm lifting and building muscle to help prevent the saggy skin, but now I am definitely going to start brushing. I'm so glad you posted.

I can eat tortillas but they do make me feel very full. I usually stick with corn just ecause they are less filling and healthier. If I'm eating a taco I will trim the edges of the tortilla and only eat what's really needed. Honsestly though I really have no desire to eat them like I used to. When I do eat tacos I will only eat the meat and toppings. I do make myself shrimp quesodillas and that's when I tend to eat tortillas. But I no longer have the need to eat them with caldo or meat.Having the surgery has been the best ever. No regrets here. There really no limits to what you can have' date=' the limit is how much you can have it. I love tres leches cake and I had some the other day about 1/3 of a slice, so there is not really any over indulging like before.[/quote']
Thank you!!! I was wondering about 3 leches too, so glad you mentioned that. I wonder if I could experiment and make a Protein 3 leches cake lol.....

Yes...raising hand right here. Love me some latin food. So far I've found that carnitas are way too greasy and I cannot tolerate them. I can however eat Lechon. Guisados are a go to' date=' meat and salsa in a crock pot can't go Aron with that. Pozole is still my fav, and I can tolerate:)[/quote']I love pozole!!! Do you eat tortillas? ^ what they said. I think you'd be surprised at how understanding some people can be. I remember having to sit in desks in highschool and just feeling ugh because I could baaarely fit in them (although quite a few people were like this so I guess maybe it was the desks). Take this opportunity to do a little pre-surg weight loss! Walk around campus a bit more (I can't wait to do this this fall since I'm going to a HUGE university) and eat a little bit smaller portions. I think you'd be surprised at what a few pounds less can feel like.Hang in there December's right around the corner.
Yea I looks like this is my best hope!! Those seats are just insanely small, and there's a gym in my building. Thanks for the idea! And good luck in college!

Is there a way you can talk to the Instructor/Professor and ask if you can have a different seat. I too have been in that situation. It was painful yet I only had to endure for a short stint. You have at least 3 months more.I hope you can get relief with this situation.

Try to either talk to your professor or go to the school help center. You should not have to sit in any chair that is going to bruise you. I am certain that they have policies related to student health concerns and this is certainly one!! Good luck.Yes I think I know where to go, but I'm scared they will just say drop the class. I can but I need it for my major.

I feel your pain =( I am in classes that start next week and I am having flashbacks to last year when I couldn't sit comfortably in those auditorium type seats. The desk thing would never go down' date=' I couldn't get any kind of comfortable, the chairs were too small. I was too embarrassed to say anything, but I really think they focus more on to getting students in a room than making sure they're comfortable - which is stupid because who can learn if they can't even put the desk thing down and concentrate? All I could seem to think about in these classes was how uncomfortable I was .It sounds like your situation is even worse - if it's bad enough that you're getting bruises you really need to see if the teacher will accomodate you somehow. That's exactly how I feel! I'm a really studious person, but yesterday I just couldn't think about ANYTHING else.
I mean the bruises are small, kind of oblong around the same size of an antibiotic... you know the horse pills? Luckily my school isn't all that big compared to some. I just have no idea how to approach the conversation....

It was just like that diner scene in the movie "There's Something About Mary". I was surprised they didn't ban me from the restaurant. And what's worse is that the last time I went there, I noticed they had replaced the old stools with ones that were super-reinforced industrial strength designs.
