I'm not good with anatomy, but with your concerns on how that surgeon staples off the tummy, ask if he fully disects the fundus. That's the stretchy part and that is where the ghrelin is mostly made from what I've read.

If he fully disects the fundus, from your description, and some of the anatomy pics I looked up today, I think you'll be okay. But, I understand your concerns.
