Creamy Spinach Chicken Salad

I absolutely love spinach dip! I bought some at Walmart the other day (the Tostitos brand creamy spinach dip - on the chip aisle). Yesterday I used it to make chicken salad, instead of mayo and it was wonderful! The spinach dip has 50 cal, 4g fat, 2 carbs for 2 tbsp. Mayo has 180 cal, 20g fat, and 0 carbs for 2 tbsp. It's much lower in calories and fat, and it gives a lot of flavor.

I used canned chicken, added a few tbsp. of spinach dip (as much or as little as you like) and a little salt and pepper, very tasty lunch!! I love the texture it gave the chicken salad. The dip has diced veggies, so it adds a little crunch, which I love. Hope you all like it!

The spinach dip is definitely going on my grocery list. I love the stuff and I already have the canned chicken in my pantry. This will be great to take to work for lunch. My lunch is usually so boring. Tuna 2 or 3 times a week or turkey and ham with cheese.

Have you tried some of the whole grain crackers like Kashi or wheat things (8 of them are around 8-10 carbs if I remember correctly). I still like a little crunch once in awhile. This spinach/chicken dip would be great on them.

Thanks for the idea Georgia Girl.

Hey nip, I have tried the Kashi Fire Roasted Vegetable ones and they are really good. I love those, they are very good. Hope you enjoy!

Hubby (also banded) takes the Tostido Queso / Mixes a drained can of Rotele / Shredded chicken & Warms it in the crockpot. This is his wkend staple most of the time - I told him about the creamy spinach and his eye widened :). I see this in his future - FAST!!

Yum! The queso dip is in my top 10 foods- I was wondering what I could make with it! Thanks for the tip!

Thanks for a great recipe! I tried this today as a celery filling. I put the spinach/chicken salad in a larger tube pastry bag and filled the cleaned celery. So yummy!!

Great idea! Does celery go down pretty well for you? I have not tried it raw since being banded because it's a little stringy and I wasn't sure how it would go down.

I've tried it, but only after de-ribbing it. Then it does fine. Otherwise, I have to cut it up in VERY small pieces or I'm afraid it will cause problems.

Sadly, my DH hates spinach, so he won't eat it. On the upside of that, MORE FOR ME! LOL!

i made the mistake of showing DH the dip... he was droooling ... guess i need to stock up. i found it in Super Target.

I love this dip! I nuked 1 wedge of light laughing cow cheese in the microwave for about 20 seconds and mixed it with some of the dip and it made a nice little topper for my Bocca Burger patty. It would work well for a chicken breast too! If I could handle steak, I would mix the dip with a little bit of blue cheese for a steak topper!
