Creamy Spinach Chicken Salad

I absolutely love spinach dip! I bought some at Walmart the other day (the Tostitos brand creamy spinach dip - on the chip aisle). Yesterday I used it to make chicken salad, instead of mayo and it was wonderful! The spinach dip has 50 cal, 4g fat, 2 carbs for 2 tbsp. Mayo has 180 cal, 20g fat, and 0 carbs for 2 tbsp. It's much lower in calories and fat, and it gives a lot of flavor.

I used canned chicken, added a few tbsp. of spinach dip (as much or as little as you like) and a little salt and pepper, very tasty lunch!! I love the texture it gave the chicken salad. The dip has diced veggies, so it adds a little crunch, which I love. Hope you all like it!

I'm starting to think they need to re-package it and market it as a salad "dressing" like they do with the mayo based stuff. They're missing out on a big market for this!

I was thinking this would make a great egg salad, too, chop up a little celery into it really fine, make it even crunchier... And just a dab of dijon mustard.. Dang, I'm drooling...

I knew I forgot to add something to my grocery list! I've been meaning to try this for ages. chicken is still hit and miss with me, but I'm going to try it anyway. I'll know as soon as I put it in my mouth whether I can handle it or I should spit it out.

If the chicken fails, I'm going to try it with canned tuna. And maybe canned crab or pink salmon as well.

This is great. I love that tangy sweet taste from store bought chicken salad. I have never been able to get that making my own chicken salad. I don't think I'll ever make it any other way!:unsure:

I finally got to try this today. It's delicious! I didn't have any problem with the chicken either. I'm looking forward to trying everyone else's variations on the original recipe.

I'm glad you all like the recipe! I love this dip! I use it on my burgers for a topper, on a chicken breast as a topper. While I was on vacation, I bought some whole wheat pita bread, brushed a little EVOO on it, sprinkled some garlic salt on it and cut it into pieces and baked them in the oven until crispy. I used them as chips for dipping with the spinach dip...........it was sooooo gooooood.

Could someone kindly post the ingredients of this wonderful sounding dip on this thread as I'm in the UK and we don't have it over here ;-(

I'm sure it's not rocket science but I'd love to know the 'secret' ingredients that make so many of you rave about it!

I'm guessing Spinach is one of them..... just a hunch :-p

The whole 'canned chicken' idea.

Is it really that good? Does it beat normal chicken just because it's already minced and squished into a can?

i'll buy some and try it.... I used to think canned meats were really fatty so maybe they're changed?

Or maybe you have yummy ones in the States and we have the yucky ones. Oh, well, will get some anyway!

Fresh chicken is absolutely better than the can, but the can is really convienent when you don't want to cook like when you're in a hurry to make lunch to take to work and with the spinach dip it's really quite good.

The tostitos spinach dip is quite a bit lower in calories than the homemade. I personally like the homemade but I use the tostitos since I'm watching calories. To make the homemade it takes a dehydrated vegetable Soup mix, Water chestnuts, frozen spinach (squeezed/drained), and if I remember right sour cream/mayonaise. The sour cream and mayonise is what makes it high in calories, but its so good.

I was in Walmart a few days ago and I bought a couple of traditional rotisserie chickens from the deli. I decided to shred one of them up and make the spinach chicken salad with it and it was DELICIOUS! So much more flavor than canned chicken. I'll definitely be using rotisserie chicken from now on. I'm sure it has more calories but I did make sure I removed the skin and as much fat as I could. Most of the meat is breast meat anyway.

I am having surgery on June 2nd and have to do the high protein/low carb diet, this sounds like it will fit right in !!! I am going shopping today and getting some of that spinach dip :thumbup: !!
