Paleo easy homemade pancakes

1/2 cup organic sweet potato

3 pasture raised eggs

1.5 Tbsp raw almond butter (just almonds on ingredient list)

combine and cook like pancakes for a few min on both sides with coconut oil.
I topped with sliced banana.

-1/2 cup quick oats

-1/2 banana

-1 egg (or 2 egg whites)

-1 scoop of protein powder

-1 tsp vanilla

-1 tsp cinnamon

Blend it all together to make a batter, then cook them like regular pancakes.

You can substitute applesauce or pumpkin puree for the banana.

You can add a little bit of milk or water if the batter is too thick (but I like mine thick).

I also am not paleo but I like the banana pancakes. Are bananas considered paleo?

2 ripe bananas, 1 egg, coconut oil for cooking. Blend egg and bananas until smooth, then cook like traditional pancakes.
