Delicious soup for Puree stage

Hi everyone! Made this in my slow cooker today. Though I am well beyond puree stage I sill eat a lot of Soup and this was delicious. Of course, I also added some GENEPRO Protein powder!

Butternut Squash Bisque INGREDIENTS:
  • 32 oz cubed butternut squash
  • 2 large shallots, quartered
  • 2 cups chicken broth
  • 1 tbsp chopped garlic
  • 3/4 cup coconut milk
  • pinch nutmeg
DIRECTIONS:
  1. Place the squash, shallots, garlic and broth in the slow cooker.
  2. Cook on low for 8 hours or high 4 hours, until soft and cooked through, a knife should easily be inserted.
  3. Stir in coconut milk and nutmeg.
  4. Blend in a blender or using an immersion blender.
  5. Season to taste with salt and pepper
