We did a " What's for breakfast" so while I'm prepping for dinner tonight I figured why not get some ideas from others. I have always loved cooking. I come from a big Italian family on one side and a down home country cooking grandmother on the other so I had no choice but to learn to cook. One of my few fears I had about having the surgery was that I would no longer be able to cook like I'm use to. The first few months after surgery I couldn't due to the recovery and dietary limitations but now that I'm fully healed and am "one" with my sleeve I'm back and better than ever. Cooking is even more fun for me now because I get to experiment and make recipes that are still delicious but have a healthy spin on them. As an example, tonight I have a new turkey marinade I'm trying out. I have included the marinade for those who might want to try it. I switched the vegetable oil out for olive oil, I used Splenda brown sugar apposed to the real and lite soy sauce. We will have roasted beets & Brussel spouts with a Asian side salad. I roast my vegetable with light olive oil and I will make my own Asian dressing. This whole dinner is really simple, it's high in protein and gives you plenty of veggies. It doesn't have to cost a fortune to eat healthy. I may have spent 15 bucks on the whole meal. This will make two meals for my family of 4. So what do you eat for dinner? Any favorite recipes? If you have pictures share! I'm a picture girl! I'm also a fan of recipes that don't require me to leave the country to find. Simplicity is my friend.

@@sbagby1960 I Polk holes in it with a fork and stick it in the microwave, depending on the size usually 8 mins!

Ok so I switched out the salad for greens and made my husband mashed potatoes (his plate) that marinade was AWESOME!!! One of the best things I've made in awhile! Def try that marinade!!

Boring dinner because I was running around today. Half a veggie burger with a bit of cheese and fried onions over romaine. Now I'm sipping an Isopure Nocarb to get the rest of my protein in for the day then back to my water.

@@lauraellen80 Did your quinoa turn out soft? I've never had it turn out soft but maybe it's not suppose too?

Yeah, it was pretty soft. The recipe has you add the quinoa and water as stuff and then bring it to a boil and simmer it with the lid on for 25-30 min. I did 25, stirred it, and then covered it for another 5.

My dinner tonight was simple because I had to work today. I have grilled salmon and about 1/4 sweet potato.

@@Elode I am jealous of those beets... Roasted beets are my favorite. I will have to make some this week. I am also going to try that tasty looking marinade.

@@glitter eyes I didn't even make the beets tonight. My husnabd waits so long to eat that I didn't feel like making them. I will have them and the salad tomorrow! They are wonderful.

@@lauraellen80 I ask because if I bite into something hard when I'm eating and I don't think it should be instant vomit! I've always been that way. My mom would put a whole chicken in the crock pot and sometimes there would be a tiny hard bone....puke!

Not a fan of morning star. Too many fillers. I either make my own or I buy brands like Lightlife or Hilary's.

Properly prepared quinoa should be soft & fluffy like rice. Do you rinse your before cooking?

Pizza toppings! lol not cooking but they ordered pizza at work and I took the toppings. lol

I just rinse. The grains are so small I would think soaking would make it mushy. I bring my (salted)water to a boil first then add quinoa. Boil on med heat with a covered lid for 6 - 10 minutes. Then turn the heat off and let sit for another 10 or until all liquids are absorbed.

Baked Swai fillet. I am really lazy with my food since I log it all, I just eat the same things over and over again. It is also easy to make one portion for a single person.

OK Monday, work day. That means crockpot.... threw in chicken breasts, left over Portobello mushroom soup, cilantro, fingerling potatoes and lemon. Hope it turns out O.K.
