It was heaven to finally start this stage, after just Protein shakes! And then after a day or two I was kind of sick of it... but then I came to actually really enjoy it, lol.
I know rules are protein first, and then veggies - but being that I very strictly measure and portion, and don't ever have a problem getting both in - I have started blending them together. It tastes SO much better to mix the flavors, and I find that the veggies keep the meat more moist - without having to add sauces and such.
Anyone have any recipes they loved for this stage?
I've been trying to fit my meals into what the family's having - like, when it's Spaghetti Night, I throw a chicken breast into the sauce for myself - it cooks so tender it just shreds, and there I have my protein while others eat Pasta. Or - last night was Stuffing, which we make an entire meal out of... saute mirepoix & mushrooms, ground beef, and bite-sized chunks of pork loin, then mix with Stovetop Stuffing and bake. I just kept back some of the sauteed veggies, and left a couple chunks of the pork loin about chop-size, and buried them in the middle of the stuffing. They cooked up SO moist, and then I just dug them out & blended with the veggies, and just a teeny bit of the stuffing. I used exactly what was for dinner that night, and it tasted pretty much the same - just much better suited to my new eating style! And it was just as good today for lunch
