your body still breaks down and removes materials from your body. Have seen people who haven't eaten in weeks have large volume stools which was shocking to family members. As stool sits in the colon, Water is removed which caues the stool to be thicker and have some more "solid" pieces.

This is at least part of it. I'm sure there are other reasons I'm not well versed in.
